No Butter Chocolate Chip Cookies

Cookies cookies and when you say with chocolate, kids go crazy. The same is at my place. I like to experiment the different recipes of cakes, cookies and breads. For the last 2 years or so, I am trying to replace the butter with different fats. No No, not due to health reasons, just to experiment and for the different textures and recipes. So this time I decided to make this No Butter Chocolate Chip Cookies.

Yes I bake a lot of cookies as my kids love them and especially the chocolate cookies. And I think it is way better than the shop one due to its high sugar content as well as we do not know what type of oil or butter is used in it. Agree?

Coconut Oil in cookies

I always wanted to try coconut oil in my baking. But was always sceptical of whether it will be good. Will it taste a lot of coconut oil? As I do not like the smell of coconut oil in food. I finally decided to keep my fear aside and decided to give this No Butter Chocolate chip cookies a go.

This No Butter Chocolate chip cookies turned out to be the most delicious I ever had. They had the melt in the mouth texture. Rich, dense and bursting with cocoa flavour. And yes to those who are looking for my comment about the taste and smell of coconut oil. I could not taste it much. There was just a very tiny bit felt at the end but I was probably knowing it and was searching for the taste.

Me and my son enjoyed it with a hot cup of coffee. He never complained of any taste and was happy to ask for a second one. Yes you really cannot stop yourself after eating one. The original recipe is taken from here. Yes I have used All purpose flour in this, as that time I had not replaced all purpose with whole wheat in baking. But soon I will be making it with whole wheat.

Delicious Butterless chocolate cookies

I have shared this recipe earlier with “Kids Delight, Chocolate dishes” on Blogging Marathon. Today I am updating my post so that it is searchable in a friendly manner by google and also adding the recipe card. So this also goes for our group Foodies_Redoing_oldPost_14.


So here goes the recipe:

Ingredients

  • 1/2 Cup melted and cooled coconut oil.
  • 1/2 Cup dark brown Sugar
  • 1 cup All purpose flour
  • 1/4 Cup cocoa powder
  • 1/2 tablespoon cornstarch
  • 1 small egg (can be replaced with flax egg)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/8 teaspoon salt
  • 3/4 Cups chocolate chips

Preparation 

  1. Preheat the oven to 180 Deg Celsius. Line two baking sheets with parchment paper.
  2. In a large bowl add the melted and slightly cooled oil and stir in brown sugar.
  3. In a separate bowl beat egg .
  4. Stir the egg and vanilla extract in the above mixture.
  5. Add dry ingredients flour, cocoa powder, cornstarch, baking soda and baking powder, one by one in the bowl. Give it a good mix.
  6. Add the chocolate chips.
  7. Make lemon size balls of it with your hand and form a round shape. I use an Ice cream Scooper to take equal portions of the cookie dough.
  8. I took the help of my kid, in forming the shape, he happy mumma happy 🙂
  9. Do not flatten the cookie. One can just slightly dab the top if required with slight wet fingers.
  10. Bake cookies for 8-10 minutes until the edges are just firm. 
  11. Remove from the oven and let it sit on the cookie tray for another 10 minutes.
  12. The remaining baking continues there.
  13. Let it cool completely on the baking tray.
  14. Once cooled store it in an airtight container.
  15. Enjoy it with a cup of coffee or hot milk.

Notes

  • 1 Cup = 235 ml, 1 tablespoon = 15ml, 1 teaspoon = 5ml
  • Oven time and temperature varies for baking
