Zucchini Chocolate Whole Wheat Bread

Zucchini chocolate Whole Wheat Bread is a moist, light and a perfect chocolatey treat for all age groups. One can enjoy this bread as a snack with a cup of coffee or simply drizzle it with warm chocolate syrup and enjoy it as a dessert. This also acts as a perfect base cake for any birthday or designer cake.

Zucchini/Courgette

Zucchini/Courgette is one of my favourite vegetables. Loaded with vitamins and nutrients. It is made of 95% water and is extremely low in calories. Technically it is a fruit but used as a vegetable. One of the versatile ingredients and used in savory as well as sweet recipes.


Why add Vegetables to Bread/Cake

Adding Vegetables to Bread or a cake makes it more moist. It adds to the flavour and the cake turns out lighter. It would add a bit of healthier portion to the cake as well. I am not saying it is healthy as it is a cake and has sugar and other things in it. But personally I would prefer a cake with a veggie as opposed to not at all.

Other Vegetables One Can Add to Cake/Bread

Carrot, Beetroot, Butternut Squash, Pumpkin are all the different options that can go in a bread/cake. And needless to yes I have experimented with almost all. I am baking this Whole Wheat Carrot Cake for more than 7 years now and my recent addition are this Whole Wheat Butternut Squash and Apple Muffins . I have incorporated Beetroot in this, Beet Root and Oats Cookies and also sneaked in this BeetRoot and Dates Energy Bites.


Sneaking vegetables is also a good idea, especially when you have fussy eaters. This is also one of my reasons to do so. My son knows that I sneak vegetables in cakes, so now he does ask me are you tricking me :-P. I once made him try this, Healthy Avocado Chocolate Mousse. Since it does not have much sugar, he did not like it much. So he always ask me now, does it have Avocado :-).

Zucchini Chocolate Whole Wheat Bread Recipe

In this Zucchini chocolate Whole Wheat Bread Zucchini is completely hidden. It gets completely hidden with the cocoa powder. To believe me bake it. A child would really not know until he or she has seen it. Yes you can make this without chocolate too if you like. This Zucchini chocolate Whole Wheat Bread is one of my go to bread for get together or as a treat when we are travelling.

The recipe is adapted from here with my tweaks. I have replaced the all purpose flour with whole wheat flour and white sugar with brown. I found that the sugar was okay not very sweet due to whole wheat. One can add a bit more sugar if needed.

So here goes the recipe for Zucchini Chocolate Whole Wheat Bread:

Ingredients

  • 1 1/2 cups shredded raw zucchini (courgette) (I roughly put it around 1 1/2 cups, a bit more or less is fine, but not too much)
  • 1 cup (130 grams) Whole Wheat flour
  • 1/2 cup (45 grams) cocoa powder 
  • 1/4 teaspoon baking powder
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground cinnamon (optional)
  • 3/4 cup semisweet or bittersweet chocolate chips
  • 2 large eggs
  • 1/2 cup (120 ml) vegetable Oil (corn, or canola oil should work, I always use vegetable Oil)
  • 3/4 cup (175 grams) Dark Muscovado Brown Sugar (one can add white granulated sugar too)
  • 1 teaspoon pure vanilla extract

Preparation 

  1. Preheat the oven to 180 Deg Celsius. 
  2. Line a 8 Inches loaf pan with liner or one can just spray or grease the pan with oil.
  3. Grate the Zucchini using a medium size grater.
  4. In a large bowl, whisk together the whole wheat flour, cocoa powder, baking soda, baking powder, salt and ground cinnamon.
  5. Fold in the chocolate chips.
  6. In another large bowl whisk the eggs.
  7. Then add the oil, sugar and vanilla extract and whisk until well blended.
  8. Fold in the grated zucchini.
  9. Add in the flour mixture and fold in gently.
  10. Stirring until just combined. Do not over mix.
  11. Fill in the Loaf pan to 2/3rd with batter and bake for 55-60 minutes.
  12. The bread is done when a toothpick inserted comes out clean.
  13. Remove from oven and place on a wire rack. Let it cool for 10-15 minutes.
  14. After that remove it from the pan and let it cool completely on a wire rack.
  15. Yummy and chocolatey Zucchini Chocolate Whole Wheat Bread is ready.

Notes

  • 1 teaspoon = 5 ml, 1 tablespoon=15 ml, 1 Cup=235 ml
  • Nuts and seeds can be added in the mix.
  • One can replace the whole wheat with all purpose or plain flour if required.
  • Eggs can be replaced by flax eggs. (I have yet to try this)
  • If your oven is too hot, reduce the temperature by 10 Deg C.
  • Keep an eye out after 45 minutes as oven temperature varies and so does baking time.
  • One can replace loaf tin with a round or a square tin. The baking time will vary accordingly.
  • Zucchini can be replaced with Carrot or Butternut squash

I love this bread / cake so much, as the zucchinis are overpriced thru the year, I wait for the winter to try a batch or two of this decadent cake. wholewheat makes it far less guilty !

Zucchini Chocolate Whole Wheat Bread looks so moist, chocolatey, gooey and delish. Would love to have it with a glass of milk, I can just imagine how it would taste dunked in milk. Yummmmm.
