Sugar-free Hazelnut Chocolate butter is a delicious chocolatey spread or butter. It is a healthy replacement over store-bought chocolate butter or spreads. This chocolate butter does not contain any added sugar and the sweetness comes from the chocolate added.

Good quality Chocolate

Okay, before you all start complaining about how can chocolate be healthy? If you are using good quality chocolate and the one which has a good percentage of cocoa and cocoa butter. Dark chocolates with more than 70 per cent of cocoa are considered healthy. 

As I mentioned in my earlier post on Crunchy Chocolate Cornflakes, always use good quality chocolate. Especially when you are making it at home why waste the effort? Also chocolate is generally a kid’s favourite, so best to use good quality.

My kids love to spread the chocolate in their whole wheat banana pancake. I do not like to spread it with the shop-bought spread. I was thinking of making something healthy that will satisfy their chocolate cravings as well as add some nutrients with less sugar.

So I decided to make these 2 Ingredients Hazelnut Chocolate Butter. Though one can add sugar or honey, I have not added any as we found the chocolate butter perfect for our cravings.

Hazelnuts

Hazelnuts, like any other nuts, are a rich source of protein, fats, and vitamins. They have a sweet flavour and can be eaten raw, roasted, or ground in a paste. Hazelnut or hazelnut chocolate spreads are used in cookies, cakes, and sandwiches. When hazelnuts are added whole or crushed they add a nice nutty texture to the dish.


Process of Chocolate Butter

So coming to today’s recipe, the recipe uses just 2 ingredients and the third ingredient is patience. As said in my earlier post on Honey Roasted Peanut Butter, to get a smooth consistency butter you need Patience and a food processor or at least a powerful blender. I had made this once earlier and the result was not a smooth consistency butter only due to my lack of patience. This time I was determined to make it properly and patiently. I have kept the skin intact but one can remove it if required.

Ingredients

  • 1 Cup Hazelnuts
  • 1/4 Cup Roughly chopped Dark chocolate or chocolate chips

Instructions

  • Spread the hazelnuts on a baking sheet let it roast for 5 minutes or until you see the skins have started coming.
  • This can be done on a pan with medium heat.
  • Once cooled, take that in the food processor and start grinding in intervals of a min and every time giving it a quick mix as it has a tendency to get stuck up under the blades.
  • I have not removed the skins, one can remove if desired.
  • Repeat this until you get the desired consistency. Give a break after 5-8 minutes if it is not done. Repeat after some time. But this was much quicker than peanut butter.
  • At almost the end of it melt the chocolate and add to the hazelnut mixture.
  • Chocolate melting in a microwave should be done in a burst of 30 seconds or less. A good quality chocolate should melt in 1 min or a little more. After every 30 seconds stir it. Stirring the chocolate causes friction and it melts. Mine was done in around 70 seconds. After 70 seconds I had some pieces but stirring it melted it completely.
  • One can use a double boiler to melt the chocolate.
  • Blend it again and you are done.
  • Enjoy it with a slice of bread or on crackers.

Notes

  • 1 Cup = 235 ml, 1 tbsp= 15 ml, 1 tsp = 5 ml
  • One can add sugar if required.

Definitely agree instead of eating store brought junk which uses god knows what chocolate your chocolate butter is healthy. Atleast you know what you have added unlike the store brought ones. Loving the recipe Renu. Must see if I can source hazelnut.
