Oil Free & Egg-Less Granola

I was never an Oats person at least not used to eating Oats with milk. I would make many savory recipes like Oats Vegetable Chila Pancake or Oats & Green Dal Toast or hidden in chocolate like this, No-Bake Chocolate Ball or something similar. But that changed for the last few months. I first tried a simple oat mix with some nuts, and milk for a snack, I started enjoying that. Though I did not soak the Oats much. Slowly I started experimenting on this and decided to make my version of Healthy Oil Free & Egg-Less Granola.

Another thing is both of my kids have starter loving cereals in their breakfast. I do not want to give them the same ones everyday or the prepacked store ones which are loaded with sugar. So I decided to make this Granola, which is loaded with nuts, honey, nutmeg, cinnamon, coconut, flaxseed etc.

 

Secondly it is too cold here and the cold wintry months demand for some good foods which are packed with nutrition as well as help keep your body warm. Oats are one of them which is considered to be a quick and healthy breakfast and a wholegrain powerhouse that is packed with plenty of nutritional value for your health. Combine them with other winter warmer foods, like Honey, Nutmeg, Nuts etc, you are having one of the healthiest breakfast. Also Oats and nuts help you keep full for longer, so a good weight loss food too.

 

If you are kids do not take this in milk, you can shape them in the form of bars too. A bit of binding agent as flaxegg might be required, hopefully I make something soon and will share. Why I am talking so much about Winter warmer foods, is because I am participating in this week winter warmer food theme for BM hosted by PJ of Seduce Your Tastebuds. I will be sharing 3 different winter warmer foods here. I am also sharing this with ImprovCookingChallenge, My first time ever, where the theme is Honey and Oats.

 

So coming to Granola, can we have flavours?

I like Granola because of its crunch and the added nuts to it. I never thought making granola is so easy and require just a few ingredients at home. Plus you can flavour it as you like it or add or remove the nuts based on your preference. I have added cinnamon and nutmeg, you can skip it if you don’t like. While writing this I have a few new flavours coming in my mind, hopefully I try them.

Does it have sugar? Is it Vegan?

Since I like a crunchier texture, I added loads of nuts and for some sweetness used honey and raisins, the natural sweetener. The quantity of nuts, raisins can be as per your choice. Next is If you want to make this vegan, replace the honey with maple syrup and you are sorted.

 

How much time it takes?

This Healthy Oil Free & Egg-Less Granola, is very easy recipe and can be assembled in few minutes. The next job is baking in the oven, which takes around 40-45 minutes to get that perfect crunch. Once you make a batch you can store it in Air tight container for at least 3-4 weeks depending on the weather.

How can I enjoy this Granola

The end result of this 45 minutes baking is a healthy Oil Free & Egg-Less Granola which is filling, yummy, crunchy and healthy breakfast. Just add milk or yogurt or top it with fruits and you are sorted for breakfast for the next 3-4 weeks. I even made an overnight granola/ oats version of this with yogurt and I loved it. (Recipe coming soon)

 

Ingredients

  • 3 cups oats (I used Porridge oats, you can use old fashioned too)
  • 3/4 cup raw almonds, whole or halves
  • 1/2 cup raw cashews, whole or halves
  • 1/4 Cup Pecans
  • 1/4 Cup Brazil nuts
  • 1/4 Cup Raisins
  • 1 cup coconut flakes or shredded coconut
  • 1/4 cup flaxseed’s (You can grind too a fine powder too, I used it as is)
  • 1/2 cup Honey (Vegans can use Maple Syrup)
  • 1 tbsp vanilla extract
  • 1/2 tsp cinnamon powder, optional
  • 1/2 tsp freshty grated nutmeg powder, optional
  • pinch of salt

 

Instructions

  • Preheat oven to 150 Deg C. Line a large baking sheet with parchment paper. (The baking sheet should be large for it to bake evenly)
  • In a large bowl, combine the oats, almond, cashews
  • In a large mixing bowl, combine the oats, almond, cashews, Pecans, Brazil nuts, Raisins, flaxseed, coconut flakes, Honey, vanilla, cinnamon, nutmeg and salt.
  • Mix it well.
  • Layer the granola mixture on the lined baking sheet as evenly as possible.
  • Place baking sheet in the oven, on the middle rack, and bake for 45 minutes, stirring the mixture after every 10 minutes or so.
  • Once done, remove from oven and let cool.
  • When granola is cooled, it will be crunchy.
  • Store granola in an air tight container for up to 3-4 weeks.
