Gluten Free Double Chocolate Banana Bread

Another Gluten free bake with Coconut flour and this time it is without any form of sugar. Yes you heard it right. This Gluten free Double Chocolate Banana Bread has no White Sugar, no Honey, no Stevia or any form of processed sugar. All the sweetness comes in from the ripe banana’s and is loaded with healthy fats as it is made using coconut flour and has some sesame paste.

Why sesame paste, well the original recipe called for almond butter and I wanted to make a nut free version. Be sure to check out her blog Bakerita for a lot of paleo recipes.

I was breaking my head as to what can be a replacement for nut butter. I did not wanted to add any real butter and that’s when I decided to use sesame paste. Had some sesame paste lying in my fridge when I made this Beetroot hummus and decided to take the risk. Well Fortune favours the brave. Yes it did worked and I was not able to taste any sesame in this, but it did added the necessary binding as well the necessary fat required from the butter.

Now at times I have loads of banana and some just gets ripe without being eaten. I simply freeze them by peeling the skin off. When I need it I simply defrost and use as required. And then my cravings for chocolate were at its peak 😀 :D. So I thought of making a bread with chocolate overdose or extra chocolate and to enjoy it guilt free, at least a slice, I decided to use low carb coconut flour.

All in all the bake was deliciously moist and this Gluten free Double Chocolate Banana Bread turned out soft, chocolaty and loaded with bursting flavour of chocolate and banana.

Coconut Flour Bakes

As I have mentioned in my earlier bakes Coconut Flour Orange poppy seeds muffins , Chocolate Coconut Flour Cookies , Low Carb Chocolate Coconut Flour cake using coconut flour, it uses a lot of eggs and the same is true with this recipe. It needs the binding and the eggs provides that. The cake is naturally gluten free as it is made using coconut flour and protein rich as loaded with eggs. Be sue to use gluten free cocoa powder, if you are allergic to gluten. It is nut free, dairy free and sugar free as well.

So here goes the recipe:

Ingredients

  • 5 Ripe Bananas mashed (Approximately 2 1/2 Cups)
  • 4 eggs at Room Temperature
  • 1/2 Cup Sesame Paste
  • 1/4 Cup coconut oil melted and at Room temperature
  • 1 teaspoon vanilla extract
  • 1/2 Cup coconut flour
  • 1/2 Cup cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 110 grams of dark chocolate, chopped

Preparation

To make Sesame Paste

  • In a high speed blender or a food processor blend in the sesame seeds until it forms a paste like structure.
  • Use olive oil or coconut oil 1/2 teaspoon at a time to help in grinding and form a paste.

For the Bread

  • Preheat the oven to 180 Deg C, grease a loaf pan (9 * 5 inches).
  • In a bowl sift in all the dry ingredients, i.e. Coconut flour, cocoa powder, baking powder, baking soda, and salt.
  • Be sure to sift the flour as coconut flour tends to have lumps.
  • In a separate bowl mash in the bananas.
  • Add in the eggs, vanilla extract, coconut oil and give it a quick mix.
  • Add in the sesame paste and mix again.
  • Now add the dry mixture to the wet and combine everything.
  • Add the chopped chocolate and fold the mixture.
  • Pour the mixture into the prepared pan and let it sit for 10 minutes as coconut flour absorbs moisture.
  • Bake the cake into a preheated oven for 50-60 minutes or until toothpick inserted into the centre comes out clean.
  • Remove the cake onto a wire rack after 30 minutes.
  • Let it cool completely. Enjoy with a cup of dark coffee.

Notes

  • 1 Cup = 235 ml, 1 tablespoon = 15ml, 1 teaspoon = 5ml
  • Oven time varies for baking , do keep an eye after 45 minutes.
  • Be sure to use gluten free cocoa powder, if you are allergic to gluten.
  • Sesame paste can be substituted with almond or nut butter of choice.
  • Coconut oil can be replaced with any neutral oil.
  • If you are using a round or square pan baking times will vary, generally would be less.
