Omani Maldouf - A FlatBread made with Dates

This Omani flatbread is a deep flavourful, flaky bread with a mild sweetness that compliments spicier dishes/curries or can be eaten as is.

  • 2 Cups Whole Wheat Flour (One can use All Purpose Flour/Maida)
  • Salt to taste
  • 1/4 Cup Ghee (Clarified Butter) For Shallow Frying
  • Water For kneading dough

Dates Mixture

  • 8-14 1/2 Cup Soft Dates (Depending on size)
  • 1 Cup Boiling Water


Dates Mixture

  1. Soak the pitted Dates in 1 cup of boiling water for 2-3 hours or until softened.

  2. Puree the softened dates using a strainer or a fine mesh. You may require a blender to blend, if it is not very soft for you. 


  1. Mix the pureed dough along with salt, 1 tbsp ghee,  and flour and make a soft dough.

  2. Let the dough rest for minimum 20 minutes.

Making Omani Maldouf

  1. Divide the dough into equal or lemon size balls.

  2. Roll each to form a flatbread/paratha/circular disc/or shape you like to 5-6 inches long. I was trying to make a triangular shape, but as usual my paratha or rotis go round :-), so please ignore the shapes :D :D

  3. Shallow fry each using ghee until cooked from both the sides. Since the dough have dates in them, it will be cooked very fast.
