A Simple and a quick Greek Salad made using the fresh Vegetables which is crisp and loaded with the goodness of Feta Cheese.

Ingredients

  • 2 Medium Size Tomatoes - Cut into Wedges
  • 1/2 Medium Red Onion - Cut length wise or into rings
  • 1/2 Cucumber - 6 inches, peeled and sliced into half moons
  • 1/2 Green Peeper - Cut length wise
  • 8-9 Olives (I used green, traditionally Black are used)
  • 100 gm Feta Cheese (Block or cut into cubes)
  • 1/2 tbsp Red Wine Vinegar
  • 2 tbsp Extra Virgin Olive Oil
  • 1/2 teaspoon Dried Oregano
  • Salt to taste

Instructions

  • Start by preparing your vegetables. Wash the vegetables thoroughly and strain.
  • Cut the tomatoes, Pepper's and Slice the onion's.
  • Peel and cut the cucumber and place everything in a large bowl.
  • Add the olives, vinegar, oil, oregano and salt. Go easy on salt as Feta Cheese has salt in it.
  • Give everything a quick mix.
  • Now Traditionally the block of feta cheese is placed on top with a drizzle of Olive oil and a sprinkle of Oregano.
  • I have cut into cubes and gave it a mix in my salad.
  • Enjoy it as is or with some crusty bread on the side.
