Rinse and wash the Buckwheat groat in water.
1 Cup Buckwheat groat
Add water and let it soak for 30-60 minutes.
In a pot, add 1 cup water and the soaked buckwheat groat.
1 1/4 cups water
Add salt and let the Buckwheat groat cook over medium heat.

It will take around 10-15 minutes.
To check gently crush 1-2 groats between your hand, it should crush smoothly.
Do not overcook or else the khichdi will go mushy.
Remove the cooked buckwheat into a plate or a colander and spread it out.
Let this cool down completely.
In the meantime, create a paste of coriander and mint or finely chop them.
1/2 Chopped fresh coriander, 1/2 Cup Chopped fresh mint
I have not added any water, as I did it in a food processor.
If you are making a paste and adding water add as little as you can.
In a pan add ghee or oil over medium heat.
1 tablespoon Ghee
Once hot, add cumin seeds and sesame seeds.
1 teaspoon Cumin seeds, 1 tablespoon sesame seeds
When the seeds pop, add curry leaves, green chilies, and grated ginger and give it a quick mix.
8-10 curry leaves, 2-3 green chilies finely chopped, 1 teaspoon finely grated ginger
Add the chopped potato, and very little salt, and let the potatoes cook.
1 Medium potato
More water might be needed (the remaining 1/4 cup) for the potatoes to cook.
3 cups water for soaking
Once the potatoes are done, add the chopped and ground peanuts.
1/2 Cup roasted
Add the chopped mint and coriander and mix well.
Now add the coriander powder, clove powder, and sugar and mix well.
1/2 teaspoon coriander powder, 1/4 teaspoon clove powder, 1/2 teaspoon sugar
Add the buckwheat groat and lemon juice.
1-2 tablespoon lemon juice
Mix everything well but gently. We do not want the groats to get mushy.
Let this cook for 4-5 minutes, mixing occasionally.
