  1. Rinse and wash the Buckwheat groat in water.

  2. Add water and let it soak for 30-60 minutes.

  5. It will take around 10-15 minutes.

  6. To check gently crush 1-2 groats between your hand, it should crush smoothly.

  7. Do not overcook or else the khichdi will go mushy.

  8. Remove the cooked buckwheat into a plate or a colander and spread it out.

  9. Let this cool down completely.

  10. In the mean time, create a paste of coriander and mint or finely chop them.

  11. I have not added any water, as I did it in a food processor.

  12. If you are making a paste and adding water add as little as you can.

  13. In a pan add gheeoil over medium heat.

  14. Once hot, add cumin seeds and sesame seeds.

  15. When the seeds pop, add curry leaves, green chillies, finely grated ginger and give it a quick mix.

  16. Add the chopped potato, very little salt and let the potatoes cook.

  17. You might need to add some water (the remaining 1/4 cup) to help the potatoes cook.

  18. Once the potatoes are done, add the chopped peanuts.

  19. Add the chopped mint and coriander and mix well.

  20. Now add the coriander powder, clove powder, sugar and mix well.

  21. Add the buckwheat groat and lemon juice.
