Wash and rinse the Quinoa.
Soak it in enough water for 30 minutes.
Drain and pressure cook it with 1 Cup water for 3 whistles.
I did pressure cook in Instant pot for 2 minutes.
Once the pressure settles, remove it.
Drain the excess water and spread it on a large plate to cool.
Grind the mint, coriander and green chillies with just enough water to make a smooth paste.
Heat oil in a pan.
Once hot add the cinnamon, cloves and saute for a few seconds.
Now add the chopped onion and garlic and saute for a few seconds.
Next add in the mint , coriander paste and cook it so that all the water evaporates.
Now add the quinoa, salt and gently mix everything so that the masala gets incorporated.
Garnish with cashew and serve.
