Ingredients

  • 6 Eggs (at room temperature)
  • 1/2 cup Vegetable oil (One can use coconut oil too)
  • 1 tbsp (Honey) Optional
  • 3/4 cup Coconut flour
  • 2 tbsp Tapioca Flour (One can use arrowroot powder to, optional, makes a lighter loaf)
  • 1/2 tsp sea salt
  • 1 tsp baking powder
  • 1 tsp Vanilla Essence

Instructions

  • Preheat the oven to 180 deg C.
  • Grease a medium size bread pan (approximately 8 * 3 inches)
  • In the meantime in big bowl add in the eggs, Vanilla Essence, oil and honey.
  • Beat the eggs until well combined.
  • Now add in the coconut flour, Tapioca Flour, baking powder, salt.
  • Mix using a wooden spatula to make a lump free batter.
  • Let the batter rest for 5 minutes. This helps the coconut flour to absorb liquid's.
  • Pour the batter into greased bread pan.
  • Bake until the top is golden brown and a toothpick inserted in between comes out clean.
  • It does take around 30-35 minutes.

Notes

  • 1 Cup = 240 ml, 1 tablespoon = 15 ml , 1 teaspoon = 5 ml
  • Baking time may vary, depending on your oven.
  • Do keep an eye on the bread after 25-30 minutes. The bread gets cooked a bit fast.
