Lightly sieve the oats to get rid of small particles in oats.
In a heavy bottom pan or a wok dry roast the oats on medium for 8-10 minutes.
Roast until they are crunchy. If you crush with you hands you would hear a bit of crunch.
Remove the roasted oats in a plate.
Now add oil in a wok.
Once hot add the green chillies and coconut.
Fry this on slow until the coconut starts turning brown.
Now add in the curry leaves and peanuts.
Roast this again for 4-5 minutes, until you see the peanuts are roasted and their skin starts splitting.
Now add in the cashew and roast for 2-3 minutes.
Add in the Raisins, turmeric and give a quick mix.
Add in the roasted oats, salt, chaat masala and amchur powder.
Mix everything on slow for 4-5 minutes until well incorporated.
Switch off and now add the sugar and continue mixing until the sugar is mixed properly.
Taste the chivda and adjust the spices as per your preference.
Once cooled store it in an airtight container.
