Make a solution of water and salt and keep it aside.
Heat oil in a heavy bottom wok. Do not overfill, just fill half or one-fourth.

Once the oil is hot, use the cut arbi slices and dip in hot oil. Keep the stove to medium.
Alternatively one can directly cut the arbi slices in hot oil. Remember to pat dry the whole arbi to remove any excess water.
Only add a few arbi slices in one go, as they might stick together and not get cooked.
Once they are half done, add 2 spoons of salt water.

The oil will have some bubbles and make some noise. It is completely normal due to water and oil reaction. It will settle in a minute.
Once the oil has settled, turn the arbi chips and cook them until they are golden brown and crisp.
Remove on an absorbent paper or a colander once done.
