Hare Tamatar Ki Sabji (Green Tomato Curry)
Hare Tamatar ki sabji or green tomato vegetable is a quick and easy no onion no garlic side dish or dry vegetable made with raw green tomatoes.

300 grams Green Tomato chopped into cubes

teaspoon
cumin seeds
½
teaspoon
mustard seeds

tablespoon
coriander powder
½
teaspoon
turmeric powder
½
teaspoon
red chili powder

Jaggery or Granulated Sugar or Brown Sugar

Instructions
In a heavy bottom pan add oil.

Once hot add cumin seeds and mustard seeds.

½ teaspoon mustard seeds
Let it splutter.
Once the seeds splutter add green chili and ginger and saute for a few seconds.
2-3 green chili chopped,
1 teaspoon chopped or grated ginger
Now add turmeric and red chili powder and give it a quick stir.
½ teaspoon turmeric powder,
½ teaspoon red chili powder
Add in the chopped tomatoes, coriander powder, and salt.
2 cup 300 grams Green Tomato chopped into cubes,
2 tablespoon coriander powder,

Mix everything.
Cover and cook turning in between.
Once the tomatoes are done (They would be a bit mushy), add in the jaggery or sweetener and mix.
1 tablespoon Jaggery or Granulated Sugar or Brown Sugar
Once the jaggery is all mixed, switch off and let the sabji sit for 10 minutes for the flavors to amalgamate.
Enjoy it with rice or roti.
