Hare Tamatar Ki Sabji (Green Tomato Curry)

Hare Tamatar ki sabji or green tomato vegetable is a quick and easy no onion no garlic side dish or dry vegetable made with raw green tomatoes.

Ingredients

  • 2 cup 300 grams Green Tomato chopped into cubes
  • 1 teaspoon cumin seeds
  • ½ teaspoon mustard seeds
  • 2 tablespoon coriander powder
  • ½ teaspoon turmeric powder
  • ½ teaspoon red chili powder Optional and as per taste
  • 2-3 green chili chopped Optional and as per taste
  • 1 teaspoon chopped or grated ginger
  • 1 tablespoon Jaggery or Granulated Sugar or Brown Sugar
  • Salt
  • 1 teaspoon oil

Instructions

  • In a heavy bottom pan add oil.

  • Once hot add cumin seeds and mustard seeds.

  • Let it splutter.
  • Once the seeds splutter add green chili and ginger and saute for a few seconds.
    2-3 green chili chopped, 1 teaspoon chopped or grated ginger

  • Now add turmeric and red chili powder and give it a quick stir.
    ½ teaspoon turmeric powder, ½ teaspoon red chili powder
    Cooking of the masala.
  • Add in the chopped tomatoes, coriander powder, and salt.

  • Mix everything.
    Sabji getting cooked.
  • Cover and cook turning in between.
  • Once the tomatoes are done (They would be a bit mushy), add in the jaggery or sweetener and mix.
    1 tablespoon Jaggery or Granulated Sugar or Brown Sugar
    Adding of Jaggery in Sabzi.
  • Once the jaggery is all mixed, switch off and let the sabji sit for 10 minutes for the flavors to amalgamate.
  • Enjoy it with rice or roti.
