Irish Oat Flapjacks

Chewy and buttery rich, these Irish Oat Flapjacks are easy to make breakfast bars or a post-workout snack, or a great finger or travel food.

Ingredients

  • 1 Cup - 120 grams - Unsalted Butter
  • 1 Cup - 200 grams - Light Brown Sugar
  • 2.5 cup - 250 grams - Oats
  • 2 tablespoon golden syrup
  • ¼ Cup Mixed nuts and seeds - Optional - I have used a combination of Sultanas sunflower, and pumpkin seeds

Instructions

  • Preheat the oven to 150 Deg C.
  • Line a square baking tray with parchment paper.
  • In a heavy bottom pan and add in the butter, sugar and golden syrup.
    1 Cup - 120 grams - Unsalted Butter, 1 Cup - 200 grams - Light Brown Sugar, 2 tablespoon golden syrup

  • On a low flame melt the butter, sugar, and golden syrup.

  • When the butter starts melting, mix all the ingredients slowly using a wooden spoon or a spatula.
  • Once the ingredients are all mixed together and you see it start bubbling, switch off.
  • Add oats.
    2.5 cup - 250 grams - Oats

  • Add nuts and seed mixture if, using.
    ¼ Cup Mixed nuts and seeds - Optional - I have used a combination of Sultanas

  • Mix everything and pour the mixture on a baking tray.
  • Spread the mixture and dab it with the back of the spoon to form a uniform layer or around 1 cm thickness.
    Ready to be baked
  • Bake it in a preheated oven for 40 minutes.
  • Do check the flapjacks after 30 minutes. At times it is not done in 30 minutes and one needs to bake it a little longer.
  • Once done, remove and let it cool for 5 minutes.
  • Cut into the desired shape, when it is slightly warm.
  • Now let it cool completely and store it in an air-tight container.

Notes

  • Once the mixture is baked it might resemble that it is not holding together. It needs to be cooled down. Once cooled it should be in the shape.
  • If you feel it has not attained shape at all, bake it for a little longer.
