Kollu Podi or Horse gram Masala Powder

Kollu Podi or Horse gram Masala Powder is a spiced Masala Mix powder made using horse gram, a few lentils, and spices.

Ingredients

  • 1 Cup Horse Gram Dal
  • 2 tablespoon split Pigeon Pea - Toor Dal
  • 1 tablespoon Split Black Gram - Urad Dal
  • 2 tablespoon Coriander Seeds - Optional
  • 10-12 Red chilies
  • 15-20 Curry leaves
  • 1 tablespoon Cumin seeds
  • 1 tablespoon whole Black Pepper
  • 1 tablespoon sesame seeds - Til
  • 1 teaspoon fenugreek seeds - Optional
  • 1 teaspoon of Turmeric powder - Optional
  • salt - 1 teaspoon
  • 1 teaspoon Asafoetida

Instructions

  • Gather all the ingredients and keep it aside (Few ingredients are not in pic)

  • Dry roast everything individually except turmeric powder, salt, and asafoetida.

  • Keep them in a plate or a bowl. Let all the ingredients cool completely
    All Ingredients roasted and getting cooled
  • Once cooled, grind to a fine powder.
  • Mix turmeric powder, salt, and asafoetida and mix everything, and store in a clean, sterile, dry jar.

Notes

  • Standard US Size cups and spoons used.
  • As said Fenugreek adds a bit of bitter taste, so you can skip if required.
  • Coriander seeds and Turmeric powder is optional too.
  • The quantity of chili can be increased or decreased.
  • I am using spicy chili variety.
  • Skip the Asafoetida if you are gluten intolerant
