Oats Pear Apple Cake

Oats Pear Apple Cake is a healthy one-bowl cake that can be enjoyed as a breakfast or as a dessert with some fresh cream on the side.

Ingredients

Dry Ingredients

  • ¼ cup brown sugar
  • 2 cup oats flour
  • 1 teaspoon cinnamon
  • 1 teaspoon ginger powder
  • ½ teaspoon cloves powder
  • 1 tsp 4g baking powder
  • ½ tsp 3g baking soda
  • ¼ tsp 2g salt
  • ½ cup chopped pecans or walnuts optional + extra on top

Wet Ingredients

  • 2 tsp 8g pure vanilla extract
  • ¾ cup 180g unsweetened applesauce
  • ½ cup 100g almond milk or milk of choice
  • 4 tbsp melted coconut oil
  • 4 small pears 1 ¾ cups chopped - 1oo grams in 1 cup
  • 1 chopped pear for topping

Unsweetened Applesauce (This might give you more apple sauce than needed in the recipe. It stays good in the fridge for a couple of days.)

  • 4 medium-sized apples
  • 2 cup water (More or less might be required)

Instructions

Oats flour

  • Add the oats in a blender.
  • Process the oats to a flour-like texture.

Making of Unsweetened Applesauce

  • Rinse the apples well.

  • Chop 2 medium-sized apples into small size pieces.
  • In a large bowl, add 1.5-2 cups of water.

  • Let the water come to a boil.
  • Add the apples and simmer.
  • Let the apples simmer until they are soft and done. They should be very soft. Let it cool slightly.
  • Pass it through a sieve to get a smooth sauce.

  • Discard the peel collected on the top of the sieve.

Making of the Oats Pear Apple Cake

  • Preheat the oven to 180 degrees C / 356 degrees Fahrenheit
  • In a large bowl add the oats flour, cinnamon, ginger powder, cloves powder, salt, baking powder, baking soda, and sugar.

  • Add in the chopped nuts (leaving a tablespoon behind) and give a nice mix.
  • To this add 4 of the chopped pear and mix again so that the flour is coated on the pear. This helps in pear not get sunk below.

  • Add applesauce, almond milk, oil, and vanilla extract and mix until everything is well incorporated.

  • Cake batter ready in a baking bowl.
  • Do not overmix.
  • Add the batter to a greased baking tray.

  • Pear and Pecan are added to the top of the batter as a topping.
  • Top it with chopped pear and nuts and bake in a preheated oven at 180 degrees C / 356 degrees Fahrenheit for 30-40 minutes until the top is golden brown and a toothpick inserted comes out clean.

Notes

  • Standard US-size cups and spoons are used. 1 Cup = 240 ml, 1 tbsp = 15 ml, 1 tsp = 5 ml
  • All ovens are different, so keep a close watch on the cake after 30 minutes.
  • Baking time varies with changes in the baking tin size.
  • For me, the cake took around 45 minutes in the oven. The size of the oven dish and temperature varies and hence I have mentioned 30-40 minutes above, but it might take a bit longer at times.
