Preheat the oven to 180 C
Grease a medium loaf tin with olive oil.
Mix the grated, chopped apple, grated carrot, raisins and pecans in a large bowl.
In a separate bowl beat the Vegan eggs and the olive oil. Then add the apple mixture.
In a separate bowl sift the spelt flour, cinnamon and baking powder together until well combined.
Then fold into the wet mix.
Add the mixture to the loaf try, smoothing the surface from the top and bake for 20-25 minutes until a knife comes out clean.
Let it cool in the loaf itself kept on a wire rack.
Once cool, slice and enjoy.
