Beetroot and Carrot Yogurt Sandwich

Beetroot and Carrot Yogurt sandwich is a simple and quick breakfast or a snack for fussy eaters and is also a good way to add some Beet to our diet.

Ingredients

  • 1/2 Cup Cooked Beetroot Grated or mashed
  • 1/2 Cup Grated Carrot
  • 2 tbsp hung curd/thick yogurt
  • 5-6 Basil leaves torn lightly You can use coriander too
  • Freshly grounded black pepper powder
  • salt to taste
  • 4 Bread Slices of your choice
  • 1-2 tbsp Butter

Instructions

  • For thick yogurt remove the yogurt in a strainer or a muslin cloth and let it strain for 2 hours at least or alternatively one can use Greek yogurt or cheese or mayonnaise
  • Mix all the remaining ingredients excluding bread slices.
  • Apply butter on all the slices on one side.
  • Layer the mixture equally among 2 slices of bread.
  • Cover it with another slice of bread.
  • You can enjoy this as is or toast them in a toaster or a pan.
  • Cut and serve.

Notes

  • Thick yogurt is the key to this or else the bread will get soggy. 
  • My bread slices are big, so you might end up making 3 from the ingredients.
