Preheat the oven to 180 Deg C or 350 Deg F and line a standard muffin tin with 12 baking cups.
In a large bowl, Sift the coocnut flour, baking soda, salt.
Add in the Eggs, Honey, oil, Orange juice, Zest and Vanilla extract.
Whisk to make a lump free batter. Coconut flour tends to have lumps, so be sure you whisk the batter really well.
Stir in the poppy seeds, then divide the batter evenly among the 12 baking cups.
Bake at 180 Deg C, until a toothpick comes out clean. About 20-25 minutes.
One can enjoy them as is or use an Orange Drizzle.
