In a large pot or a pressure cooker cook the horse gram just until tender.
I just used one whistle for the pressure cooker.
Once done, drain the excess water. The water can be used as a stock for gravies.
Add in the tomatoes, peppers, lettuce, olive oil, grated garlic, lemon juice, chopped mint and coriander and salt.
Give everything a quick mix.
Garnish with coriander and lemon wedges and serve.
