Ingredients

  • 5 Ripe Bananas mashed (Approximately 2 1/2 Cups)
  • 4 eggs at Room Temperature
  • 1/2 Cup Sesame Paste
  • 1/4 Cup coconut oil melted and at Room temperature
  • 1 teaspoon vanilla extract
  • 1/2 Cup coconut flour
  • 1/2 Cup cocoa powder
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 110 grams of dark chocolate chopped

Instructions

To make Sesame Paste

  • In a high speed blender or a food processor blend in the sesame seeds until it forms a paste like structure.
  • Use olive oil or coconut oil 1/2 teaspoon at a time to help in grinding and form a paste.

For the Bread

  • Preheat the oven to 180 Deg C, grease a loaf pan (9 * 5 inches).
  • In a bowl sift in all the dry ingredients, i.e. Coconut flour, cocoa powder, baking powder, baking soda, and salt.
  • Be sure to sift the flour as coconut flour tends to have lumps.
  • In a separate bowl mash in the bananas.
  • Add in the eggs, vanilla extract, coconut oil and give it a quick mix.
  • Add in the sesame paste and mix again.
  • Now add the dry mixture to the wet and combine everything.
  • Add the chopped chocolate and fold the mixture.
  • Pour the mixture into the prepared pan and let it sit for 10 minutes as coconut flour absorbs moisture.
  • Bake the cake into a preheated oven for 50-60 minutes or until toothpick inserted into the centre comes out clean.
  • Remove the cake onto a wire rack after 30 minutes.
  • Let it cool completely. Enjoy with a cup of dark coffee.

Notes

  • 1 Cup = 235 ml, 1 tablespoon = 15ml, 1 teaspoon = 5ml
  • Oven time varies for baking , do keep an eye after 45 minutes.
  • Be sure to use gluten free cocoa powder, if you are allergic to gluten.
  • Sesame paste can be substituted with almond or nut butter of choice.
  • Coconut oil can be replaced with any neutral oil.
  • If you are using a round or square pan baking times will vary, generally would be less.
