Dudhi Kofta Curry

Dudhi kofta curry is a simple and delicious every day curry without onion and garlic and in curd based gravy to be enjoyed with rotis or rice.

Ingredients

  • 10-12 Dudhi Kofta or as Required.
  • 1/4 Cup Besan (ram flour)
  • 1/2 Cup Curd
  • 1/4 teaspoon Asafoetida (Hing **Please see Notes)
  • 1/2 teaspoon Red chilli powder (r as per taste)
  • 1/2 teaspoon Haldi (Turmeric)
  • ½ teaspoon Jeera (Cumin seeds)
  • 1 teaspoon Oil
  • 2-3 cups of Water (or as needed)
  • Salt to taste

Instructions

  • In a big bowl, mix in the Besan and curd and make a smooth paste.
  • Slowly add the water and make a lump free batter.
  • Do not add all the water in one go or else you would have a tough time mixing in the flour to get a smooth consistency.
  • Heat oil in a heavy bottom pot or a wok.
  • Once hot add in the Hing (Asafoetida) and Jeera (Cumin seeds)
  • Once the cumin seeds crackle, add in the besan and curd mix.
  • Let this mixture come to a boil on medium, stirring almost every 30 seconds.
  • Once it comes to boil, reduce the flame.
  • Add in the chillies if using, salt and the koftas.
  • If required add more water. Let this simmer for 7-8 minutes.
  • Switch off and let it rest for 5-10 minutes.
  • Serve hot with some roti's.

Notes

  • 1 teaspoon = 5 ml, 1 tablespoon=15 ml, 1 Cup=235 ml
  • Asafoetida (Hing) powder available in shops contains wheat and is not gluten free. Gluten intolerant people can either skip completely or opt for Gluten Free Asafoetida (Hing)
  • Adjust the consistency as required.
  • The kofta's do absorb a bit of water so adjust the consistency as required.
