Wholemeal and Oats Carrot Crackers are quick and easy eggless and sugar free crackers made in a jiffy using healthy ingredients like Carrot, Gluten Free Oats and Wholemeal flour. They are loaded with superfoods like chia and sesame seeds for health conscious people and has some cheese to please little ones. They are free from any leavening agent that is they do not have any baking powder or baking soda.

Ingredients

  • 1 Cup Carrot grated very finely or a puree
  • 1 tablespoon Chia seeds
  • 3 tablespoons lukewarm water
  • 1 Cup Wholemeal Flour (One can use wholewheat or all purpose/maida flour too)
  • 1 Cup Rolled oats
  • ¼ Cup Cheddar Cheese (Parmesan can be used too)
  • ½ teaspoon Salt
  • ½ teaspoon Smoked Red Paprika
  • Sesame Seeds for sprinkling on top

Instructions

  • In a bowl add the chia seeds and luke warm water. Set aside for 5-10 minutes.
  • In the meantime grate the carrots in a food processor or using a fine grater. It should almost form a puree like consistency.
  • Add in the wholemeal flour and give it a quick mix.
  • Now add the oats, red paprika, cheddar cheese, chia seeds mix and salt.
  • Combine everything. The dough should bind together if not add a teaspoon of water at a time, but it would not be needed.
  • Let the dough rest for 10 minutes.
  • Preheat the oven to 180 Deg C. Line a baking sheet with parchment paper.
  • Take 2 parchment sheets and keep the dough in between.
  • Roll out the dough into a large circle or rectangle with ½ cm thickness.
  • Sprinkle with sesame seeds and cut into desired shape.
  • Arrange them on the prepared baking tray.
  • Bake in a preheated oven for 30-40 minutes.
  • Do watch them after 30 minutes or else you would over bake them. They are done when they start turning brown around the edges and are a bit firm to touch.
  • Remove and let it cool on the baking tray.
  • Once they are cooled completely store them in an airtight container.

Notes

  • 1 Cup = 235 ml, 1 tbsp= 15 ml, 1 tsp = 5 ml
  • Do keep an eye on the crackers after 30 minutes, as oven temperature differs and you might over bake them.
  • One can replace the Chia seed mix with 1 egg if required.
  • Instead of carrot one can use Beetroot too.
