Air Fryer Eggplant Pizza

Low Carb Air Fryer Eggplant Pizza is a quick, easy, and light dish made with aubergine or brinjal, perfect as a healthy meal or a party appetizer.

Ingredients

  • 1 Large Eggplant
  • 2-3 tbsp Olive Oil
  • 1/4 Cup Cheese Mozzarella, Freshly grated/torned/chopped
  • 1/4 Cup Cheese Cheddar
  • Salt as required

For the Sauce

  • 3 teaspoon Olive Oil
  • 1 can diced tomatoes (2 fresh tomatoes diced)
  • 1/2 teaspoon Black Pepper
  • 1/2 teaspoon Italian Seasoning Mixed Herbs
  • 3 pcs Garlic small, minced/grated
  • 1/2 Inch ginger
  • Salt as required

Optional Topping Ingredients

  • 4-5 Jalepano (Optional)
  • 1/4 cup Tofu / Paneer

Instructions

For Sauce Prepartion

  • Heat oil in a pan. Saute garlic and ginger in it.
    3 teaspoon Olive Oil, 3 pcs Garlic, 1/2 Inch ginger
  • Add the diced tomatoes, seasoning, mixed herbs, black pepper, and salt. Go easy on the salt as you will be adding cheese later on.
    1 can diced tomatoes, 1/2 teaspoon Black Pepper, Salt, 1/2 teaspoon Italian Seasoning
  • Let it simmer and cook until the tomatoes are soften and the sauce thicken's so that it is just perfect to spread on the eggplant slices. Switch off and let cool.

Preparing Eggplant Pizza

  • Cut the eggplant in circles and around 1/4-1/2 inch in thickness.

  • Place them on paper towels or plate.

  • Spread some oil on it and Sprinkle them with salt, so that they release some water.
    2-3 tbsp Olive Oil, Salt
  • Let them sit for some time. In the meantime preheat your oven to 180 Deg C.
  • Brush or grease the eggplants with olive oil and add a generous amount of seasoning on them.

Baking in an Air Fryer

  • Preheat the Air Fryer to 180 Deg C
  • Roast the eggplants in them for 10 minutes, turning them at half time.
  • Add the toppings of choice. Add cheese.
    1/4 Cup Cheese, 1/4 Cup Cheese, 1/4 cup Tofu / Paneer, 4-5 Jalepano
  • Let it air-fry for 4-5 minutes or just until the cheese is melted.
  • Enjoy it warm.

Baking in an oven

  • Preheat the oven to 180 Deg C
  • Line a baking tray with parchment paper and roast the eggplants in them for 20-25 minutes, turning them at half time.
  • Once the eggplants are done baking, take them out of the oven, and spread the sauce on top.
  • Once the eggplants are done baking, take out of the oven, spread the sauce on top.
  • Add the toppings of choice. Add cheese.
  • Let it broil for 5-6 minutes or just until the cheese is melted.

  • Enjoy it warm.

Notes

  • Standard US-size cups and spoons are used. 1 teaspoon = 5 ml, 1 tablespoon =15 ml, 1 cup =237 ml. 
  • Air Fryer settings are different so baking time varies.
