Healthy Red Pepper and Cottage Cheese Dip

Red pepper and cottage cheese dip is the perfect mix of flavor, health, and simplicity. It’s creamy, smoky, and nutritious, making it an unbeatable choice for snacks or parties.
Servings: 1 Cup

Ingredients

  • 1/2 Cup Cottage Cheese
  • 1 Red pepper I have used a combination of red and green pepper
  • 3-4 garlic cloves
  • 1 tablespoon Lemon/Lime Juice
  • 1 teaspoon Red Chilli Flakes
  • Salt
  • 1/4 cup Parsley

Instructions

Roasting the Red peppers and garlic

    In oven

    • Preheat your oven to 425°F (220°C).
    • Place the red peppers and garlic, on a baking sheet lined with parchment paper.
      1 Red pepper, 3-4 garlic cloves
    • Roast for 20–25 minutes, flipping halfway through, until the skin is charred and blistered.

    In pan

    • Roast the peppers and garlic in a hot pan.
    • Flip them in between, until the skin is charred and blistered.

    Blend the ingredients

    • Let the pepper and garlic cool down completely.
    • Add the roasted red peppers, cottage cheese, garlic, red chili flakes, lemon/lime juice, parsley, and salt into a food processor or blender.
      1/2 Cup Cottage Cheese, 1 Red pepper, 3-4 garlic cloves, 1 tablespoon Lemon/Lime Juice, 1 teaspoon Red Chilli Flakes, 1/4 cup Parsley, Salt
    • Blend until smooth and creamy. Taste and adjust seasoning as needed.
