Red Kidney Beans and Black Chickpeas Kabab | Rajma and Kala Chana Pattice (Tikki)

 

I am hosting the My Legume Love Affair #122 fondly referred to as MLLA which celebrates the glory of pulses/legumes and would like to thanks Susan for giving me this opportunity. This event was started by Susan of The Well Seasoned Cook and Lisa of Lisa’s Kitchen has been hosting this series for a while now. I am guest hosting this event for the first time. Here the key ingredient has to be anything from the Legume family. So for this theme I choose my key ingredients as Red Kidney Bean aka Rajma and Black Chickpeas known as Garbanzo Beans or Kala Chana in Hindi.

 

 

Kidney beans or Rajma mainly consists of carbs and fiber and are among the richest source of plant based protein. They helps regulate blood sugar levels and are a good weight loss food. Similarly chickpeas are a rich source of Vitamins, minerals and fibers and offers a variety of health benefits such as aiding weight management and reduce the risk of several heart diseases . Chickpeas are again high in protein making it excellent replacement for meat in vegetarian and Vegan diets. (Source Internet).

 


The most common recipes of both in Indian Cuisine, include the famous Rajma chawal and Kala Chana Masala. Though being a vegetarian I am very fussy in eating Rajma or Kidney beans and always find alternate ways to incorporate this in my diet. I do make salads out of both of this nutrient dense food. So this time I decided to make Kabab out of this and I thoroughly enjoyed them as my lunch with refreshing Fresh Dill and Cucumber Dip or Greek Tzatziki. I have not used any potato in this and for the binding I did added some oats flour. One can replace this with bread crumbs. The kebabs were quite filling and a complete healthy meal in itself.

One can easily make the tikkis a day ahead if required and shallow fry on the day itself. Next time I will try to bake them so that it is a good time saving starter for parties too. This Kababs |tikkis | Pattice can be enjoyed in Burger’s too instead of the regular Potato Pattice for a more healthier option and easy to sneak in those beans into your kid’s diet and those looking for meat free burger’s this is one of the best pattice to go in it.

So coming to the recipe

Ingredients

  • 1/2 Cup Dry or 1 Cup Washed and Soaked Red Kidney Beans (Rajma)
  • 1/2 Cup Dry or 1 Cup Washed and Soaked Black Chickpeas (Kala Chana|Garbanzo Beans)
  • 1/2 Cup Chopped Onion
  • 2-3 Cloves of garlic grated or minced
  • 1/2 Cup Chopped Coriander
  • 1/4 Cup Chopped Mint
  • 1-2 tsp Garam Masala Powder (As per taste)
  • 1 tsp Cumin Powder
  • Salt to taste
  • 1/2 Cup Oats Flour (Optional, one can use Breadcrumbs or potato)
  • 1-2 tbsp oil for shallow frying


Preparation

  • Wash and soak the kidney beans and black chickpeas in enough water for 8 hours or overnight.
  • Drain the water used for soaking, Rinse and Cook the kidney beans and black chickpeas along with salt in a pressure cooker or cook them in a large pot with water until soft.
  • One can use tinned beans but I like to use the fresh ones.
  • Once done let it cool down and mash them well with a potato masher.
  • Add chopped onion, coriander, mint, garam masala, cumin powder, salt and garlic.
  • One can process the beans, chickpeas , onions and masala’s in a food processor too.
  • Add oats flour and give it a nice mix, so that you should be able to bind it in the form of a ball.
  • Take a lemon size ball and form into desired shape.

  • Shallow fry them on a pan at medium using ghee or oil.
  • I enjoyed this with my Fresh Dill and Cucumber Dip, you can serve with a dip of your choice.
