Fresh Dill and Cucumber Dip | Fresh Greek Tzatziki

 

Fresh Dill and Cucumber Dip aka Greek Tzatziki is a fresh appetizer or mezze made with just a few ingredients and is a no cook recipe. It is generally made using strained Greek yogurt, cucumber, fresh herbs, garlic , olive oil and fresh herbs. I have used Dill here to give it the sharp and zesty flavour and truly the flavour dominates in this dip. Also the cucumber gives a refreshing taste and nice crunch to the dish. I have selected this recipe for A-Z  Recipe Challenge initiated on facebook. This month’s alphabet was D , so I choose Dill to be the star ingredient of my recipe.

You can serve this Dip along side grilled meats or salads or as an accompany mezze to warm bread. I enjoyed this as a dip with my Rajma and Kala Chana tikki / Pattice (Recipe coming this week). The freshness and the zesty flavour of Dill is still lingering in my mouth and I am craving for more.

The key to making this Dip is to remove the liquid from the grated cucumber  so that the yogurt does not get diluted. Secondly the Greek yogurt should also be very thick and strained to get the authentic taste. So you need a bit of time and some advance planning to make this dip.

Below are the steps for making this delicious Dip

1. De-seed the cucumber and grate it
2. Add around 1/4 tsp sea salt to the cucumber and mix it. Allow it to drain on a sieve for a few hours or best overnight.
3. Similarly line a double cheese cloth on a sieve and add the Greek yogurt to it . Let it rest for 3-4 hrs or overnight in fridge.
4. In the meantime take olive oil and grated / minced garlic and mix them in a bowl. You can allow this to rest for 1-2 hours so that the pungent taste of garlic reduces
5. When the liquid has drained out from the cucumber and Greek Yogurt, it’s time to assemble.
One can even pat dry the cucumber on  a cotton cloth to remove excess moisture
6. In the bowl of olive oil and garlic mix,  add the grated cucumber and Greek Yogurt]and mix all the ingredients nicely.
7. Then add the finely chopped Dill, mint , lemon and give everything a nice stir.

Ingredients
  • 500 gm Greek Yogurt
  • 1 small bunch Fresh Dill (Around 1/2 Cup when chopped)
  • 2 Grated / Finely Chopped Garlic
  • 2 tbsp Olive Oil
  • 1/2 English Cucumber (around 6 inches in length)
  • 1 tbsp Chopped Mint Leaves
  • 1 tbsp Lime Juice
  • 1/4 tsp Sea Salt
Instructions
