Eggless Gulkand Muffins are flavourful, moist and the most delicious muffins I ever had. They are bursting with flavours from Gulkand aka Edible Rose Petal Jam and Cardamom. They are nutty with a generous addition of pistachio’s. I would say there are good fusion, where in we have the best of both the world.

So this month Mireille Roc from The Schizo Chef is hosting the event for Bread Bakers and asked us to bake with edible flowers. It can be fresh flowers, dried flowers, preserved flowers, flower waters etc. I was finding it difficult to source edible flowers here and at the same time did not want to miss this.

Finally a lot of thinking and google helped me to zero on this Eggless Gulkand Muffins. I always have gulkand at home. We use it as a mouth freshner or just as a mini dessert (just a teaspoon) to satisfy our sweet cravings. I decided to use this gulkand in bread. Many ideas crossed my mind on ways to use it, I might use it later, but for today I thought of sharing this moist and delicious Eggless Gulkand Muffins.
What is Gulkand?
Gulkand aka Rose petal Jam is a sweet preservative made using rose petals and sugar. It is one of the most delicious ayurvedic preparations known to mankind. Gulkand can be easily prepared at home though the whole process can take around 4-6 weeks.
Gulkand has cooling properties and it’s consumption during the hot season is beleived to be beneficial. It is commonly used as a ingredient in Paan (Beetel leaves mouth freshner). Gulkand peda, teas and drinks are very common in India.

Since I have never used gulkand in bakes, I was a bit doubtful on how it will turn out. I am glad that I tried this. while taking pics, I was so tempted to eat it right away. The aroma of the sweet rose along with cardamom made me drool.

I have adapted this recipe from Sowmya’s blog , with a few tweaks to the original recipe, by replacing the all purpose flour with whole wheat and using Dark Brown sugar instead of normal white sugar. Also it uses dried Edible Rose petals to sprinkle on the top during baking. I did not find any so skipped it.

Ingredients
- 1/2 Cup Whole Wheat flour
- 1/2 Cup Quick-cooking oats/Porridge Oats
- 6 tbsp Dark Brown Sugar /Honey
- 1 tsp Cardamom powder
- 1/2 tsp Baking powder
- 1/4 tsp Baking Soda
- 1/4 tsp Salt
- 1/2 Cup Milk
- 2 tbsp Olive Oil or any flavourless oil
- 1/4 Cup Curd/Yogurt
- 3 tbsp Pistachios chopped finely
- 3 tbsp Gulkand / Rose Petal Jam
Preparation
- Preheat the oven to 175C
- Line a muffin tray with muffin cup liners
- Powder the oats finely in a blender
- In a large bowl sift in the Whole wheat flour, Oats flour, Sugar, Cardamom powder, Baking powder, Baking soda and Salt
- In a seperate bowl add in the milk, curd and oil.
- Add the wet ingredients to the dry and mix in to form a lump free atter.
- Fold in the chopped pistachios and Gulkand /Rose Petal Jam
- Pour into Muffin cups up to 3/4 full
- Sprinkle few dried rose petals on top if using
- Bake for 20 minutes or till a toothpick inserted comes out clean
- Cool it on a wire rack.
- Enjoy!

- 1 Cup = 240 ml, 1 tablespoon = 15 ml , 1 teaspoon = 5 ml
- Baking time may vary, depending on your oven.

Muffins with gulkand must be tasting so good. Hubby likes muffins and I will make these sometime soon after Diwali. I am yet to try out any dessert with gulkand.
