What is Mediterranean diet
Mediterranean diet focusses on fresh foods like fruits, vegetables, whole grains, less dairy and meat. It emphasises on eating fresh produce and avoiding unhealthy food. Avoiding processed foods like bread, pasta, refined oils, processed meat etc.
The Mediterranean diet recommends to eat wide variety of Vegetables, Fruits, nuts, seeds, legumes, whole grains. Moderate amounts of Fish and Seafood. Poultry and dairy. Sugar i best avoided and so are foods laden with sugar. So in short raw and unprocessed food is the best.

The Theme
Why I am talking today about Mediterranean diet? It is Monday and it is time for FoodieMonday. i.e. a special theme suggessted by someone in our blogger group. So this week, Archana from the Mad Scientist kitchen asked us to make a dish which follows the Mediterranean diet. Before I continue further I would highly recommend hopping to Archana’s blog for some delicious healthy recipes. One such example is here Gobi Musalam, which I want to try asap.
Mediterranean Fresh Pineapple Salsa
The #222 theme for today is Mystique Mediterranean. I decided to make this Mediterranean Fresh Pineapple Salsa. The recipe is quite simple and one can modify it as per needs. I have used fresh Pineapple, some Red pepper and Onion. To satisfy my Indian buds, I have added 1 chopped chilly. Lemon juice goes in to add a bit of kick and adds to the flavour. That’s it you are done with a delicious salsa which can be eaten as is or served along with some chips or pita bread.

So here goes the recipe.
Ingredients
- 1 Cup Chopped Fresh Pineapple
- 1/2 Cup Chopped Red Pepper
- 1/4 Cup Chopped Onion
- 1 small green chilly finely chopped
- Juice of 1/2 lemon
- Salt to taste
Preparation
- In a big bowl, Combine all the ingredients.
- Give it a nice mix and serve along with some chips or Pita Bread.
Notes
- 1 teaspoon = 5 ml, 1 tablespoon=15 ml, 1 Cup=235 ml
- Onion and green chilly are completely optional.

I love it!!! In fact we love pineapple but since the kiddo hates it we avoid pineapples. But this salsa i am sure she will enjoy. I definitely want to try making the salsa it is one delicious representative of Mediterranean cuisine.

Pineapple salsa with red bell pepper, onion and lemon sounds oh so flavorful ! I can dig into it right away. Do not need any accompaniment with this.
