If you’re craving something savory with a spicy twist, try this Roasted Pepper and Onion Spelt Flour Bread. It’s perfect for breakfast or picnics.
It is sort of a one-bowl bread recipe, with no special equipment needed. Yes, a little planning as I have roasted the peppers. Rest it just add all the ingredients in a bowl, mix it, and add in the desired pan to bake.
Yes, there is no initial rise to the bread dough or shaping the dough, etc. It is mixed, pour the batter/dough in the baking pan, and let it rise in the baking pan for an hour or so and then bake.
This bread is soft and would have a little moisture to it. It is not a normal sandwich bread that holds its shape firmly or is hard.
How to enjoy this Roasted Pepper and Onion Spelt Flour Bread
- It is best when it is slightly toasted.
- There is no need for jam or chutney as it has too much flavor packed in it. However, a slight spread of chutney, mayo, or jam would not harm.
- Enjoy it with soup

Ingredients used for Roasted Pepper and Onion Spelt Flour Bread
Flour
I have used spelt flour in this recipe. One can replace it with All-purpose/Plain Flour
Roasted Pepper/Capsicum
I roast the pepper on the grill, in the oven, in the air fryer, or in the microwave. Both work equally and one can use as required.
Green Onions, garlic, green chili, and salt
One can use green onions, leeks, or red or white onions. Garlic, green chili, and salt are added for additional flavor.
Chia seed egg
I have not used egg in this recipe, but to bind the ingredients I am using chia seed egg. If using egg use 2 eggs.
Olive oil, Milk, Parmesan Cheese, and Vinegar are the other ingredients used. One can skip the chees completely or use vegan cheese to make the bread vegan.
Fast Action Dry yeast and sugar are used for the bread to rise. I have used fast-action dry yeast and hence it does not need an initial proofing. If you are using normal yeast, please activate the yeast first in lukewarm milk and then proceed
Dietary Recommendations
The bread is eggless. I have used parmesan cheese in this bread and hence it is not vegan. However, one can skip it completely or replace it with vegan cheese if required.
Shelf life
The bread would stay good for 4-5 days in the fridge. If you need any longer cut the slices and freeze them. When required, toast in the toaster
Roasted Pepper and Onion Spelt Flour Bread
Equipment
- Oven/Grill/Microwave
Ingredients
- 425 gram Spelt flour
- 2 Pepper/Capsicum
- 350 ml milk
- 60 ml Olive oil
- 50 grams Cheese Parmesan Cheese grated
- 1-2 small chili green or red
- 4 spring onions or 1 large onion, Including the greens
- 2 cloves garlic
- 1 tablespoon Vinegar
- 2 tablespoon Chia seeds
- 5 tablespoon Water luke warm
- 2 teaspoon Sugar
- 2 teaspoon Active Dry Yeast
- ½ teaspoon oil to brush the peppers
Instructions
Preparing the veggies
- Cut the pepper in half and lightly brush them with oil.2 Pepper/Capsicum, ½ teaspoon oil
- Grill them on a grill, oven, air-fryer, or microwave the peppers until they are soft.
- Let them cool completely.
- Once the peppers are cooled down completely either mash them with a fork or add them in a food processor.
- To this chop and add the onions, garlic, and green chili and process everything to a semi-coarse texture.1-2 small chili, 4 spring onions, 2 cloves garlic
Making of Chia egg
- In a small bowl add the chia seeds and lukewarm water.2 tablespoon Chia seeds, 5 tablespoon Water
- Let this sit for 10-15 minutes until the chia seed swell up.
Making bread dough
- In a large bowl add the milk, oil, sugar, yeast, vinegar, and chia seed mixture and mix everything.350 ml milk, 60 ml Olive oil, 1 tablespoon Vinegar, 2 teaspoon Sugar, 2 teaspoon Active Dry Yeast, 2 tablespoon Chia seeds
- To this sift and add the flour and give a mix.425 gram Spelt flour
- Now add the vegetable mixture, cheese and mix everything evenly.50 grams Cheese
- Add this mixture to a greased baking pan. I have used a loaf tin.
- Let the dough rise in the baking pan for 1.5 to 2 hours until almost double.
Baking the bread
- Preheat the oven to 200 Deg C / 392 Deg F.
- Bake the bread for 40-45 minutes until done. The bread is done when you see it starts releasing the edges and when a toothpick inserted comes out clean. It might be still a little sticky as the bread is moist, but the dough should not be raw.
- Once done remove and let it sit in the baking tin for 10-15 minutes.
- After 10-15 minutes remove it on a wire rack and let it cool completely before slicing.
- Enjoy.

- Standard US Cup size used.
- Flour weight can be slightly up and down depending on the flour used.
- Do keep on checking the bread after 40-45 minutes.
- Oven temperatures are different.
- Changing the pan size will change the baking temperature.
