No-churn Homemade Ice Cream (Chocolate, Vanilla, Paan Masala, Mango)

No-churn Homemade Ice Cream is a rich, creamy, egg-free easy Ice Cream that is made without an Ice Cream maker. One can make the base recipe using just 2 ingredients and the third ingredient is used to add different flavours.

Once I started making Ice Cream at home, I hardly buy any more. The homemade Ice cream is much better than the store-bought one, with much less sugar and preservatives.

This No-Churn Homemade Icecream uses Milkmaid and fresh cream as the base ingredient. Milkmaid has sugar in it but one can control the amount of sugar when making it at home. As store-bought ones have much more sugar in them.

Condensed Milk Free Ice Cream

Now during the summer months, my kids enjoy this homemade ice cream. I have served many different flavours of ice creams to my guest and have seen their jaw drops when I said to them this is homemade. 

As said this ice cream does not require any ice cream maker. It is very simple and can be done within minutes. The only thing you need to do is whip the cream. If you have an electric beater then whipping cream takes a minute or so, if not, it’s fun to do some exercise at times to whip the cream or else if you do not want to do that, bring some store-bought whipped cream. 

Now just mix the whipped cream, milkmaid and the base Ice Cream is ready. Check out the video on how easy it is to make. 

Now comes the fun part. Adding of flavorings. One can make a big batch and divide the batches and make different flavours. 

Different Flavours with One Ice Cream

Like I make chocolate, paan, strawberry, blueberry, raspberry, caramel, mango, gulkand (rose petals), coffee almond, etc. I divide the batch into flavors I require and just add the ingredient.

No-Churn Vanilla Ice Cream

For Vanilla flavour, you just add 2 teaspoons of vanilla extract in half a cup of milkmaid and 1 Cup of Fresh Cream as the base. Try to use pure vanilla extract instead of essence. One can even use vanilla beans to get the best flavour. 

No-Churn Chocolate Ice Cream

For Chocolate Ice Cream I add 2 tablespoons of Cocoa powder in half a cup Milkmaid and 1 Cup Fresh Cream as the base. One can add chocolate chips to this to add a crunch. Also, I do not mix the cocoa powder completely as I like the ripple effect and granular texture of the Ice Cream.

No-Churn Paan Masala Ice Cream (Beetel leaves Masala)

For Paan Masala Ice Cream I add 2 tablespoons of Paan masala mixture in half cup milkmaid and 1 Cup Fresh Cream as the base. I have used store-bought paan masala in this. One can make paan masala at home too. 

Paan masala Ice Cream is very refreshing and is bursting with flavours. It is one of the best Ice Cream flavours I have ever made.

I started making these ice creams 5-6 years back and since then every summer I have had at least 2-3 flavours in my freezer. So enjoy.

Easy Mango Ice Cream

For Easy Mango Ice Cream, I am using mango pulp and mango pieces for the bite. Fresh juicy and seasonal mangoes are used. I like to use Alphonso or Kesar mangoes during summer when I get it or the local variety which I get here.

At times I like to add some chopped nuts to add some nutty texture. This Easy Mango Ice Cream comes out very rich and creamy and is perfect for summer.

Ingredients

Base Ice Cream Ingredients

  • 1 Cup Cream 235 ml
  • 1/2 Can Condensed Milk 200 gm

Chocolate Flavour

  • 2 tablespoon Sifted Cocoa powder more or less as per choice
  • 1 tablespoon Chocolate Chips I sometimes add, sometimes leave it

Paan Masala Flavour

  • 2 tablespoon Paan Masala

Vanilla Flavour

  • 2 teaspoon Pure Vanilla Extract / 1 teaspoon Vanilla Beans

Mango Flavour

  • 1 Cup Fresh Mango Puree (One can use tinned too, but in that case sugar might be more)
  • 1/2 Cup chopped mango
  • 1 tablespoon Chopped pistachio – Optional , any nuts can be used

Instructions

  • Whip the cream until it attains a soft whipping consistency.
    1 Cup Cream
  • Gently add the condensed milk.
    1/2 Can Condensed Milk
  • Fold the condensed milk into the whipped cream. Do not mix it vigorously. We do not want the whipped cream to deflate.

Chocolate Flavour

  • Add the cocoa powder to the mix and gently fold it.
    2 tablespoon Sifted Cocoa powder

  • One can mix it completely or just mix it to attain a ribbon texture.

  • Add chocolate chips if using
    1 tablespoon Chocolate Chips

Paan Masala Flavour

  • Add the Paan Masala to the mix and gently fold it.
    2 tablespoon Paan Masala

  • One can mix it completely or just mix it to attain a ribbon texture.

Vanilla Flavour

  • While whipping the cream add the vanilla extract or beans to the cream while whipping.
    2 teaspoon Pure Vanilla Extract / 1 teaspoon Vanilla Beans
  • Gently add the condensed milk.
  • Fold the condensed milk into the whipped cream. Do not mix it vigorously. We do not want the whipped cream to deflate.
  • Freeze it for 7-8 hours or overnight.
    Ready Paan Masala Ice Cream

Mango Flavour

  • Once the cream and condensed milk is mixed, add mango puree and gently mix it.
    1 Cup Fresh Mango Puree
  • Add some fresh chopped mangoes and mix again.
    1/2 Cup chopped mango
  • Add nuts if using and mix again
    1 tablespoon Chopped pistachio

Notes

  •  While whipping any cream be sure that everything is cold, i.e. beaters, bowl, cream. It really helps.
  • If you are using store-bought fresh cream, keep them in the fridge for some time, it really helps.
  • Any flavours can be added in the base Ice Cream

What I wouldn't give to indulge in these delish homemade ice creams :-) my eye also gravitates towards the recipe without the condensed milk and am thinking of making that very soon ! great share, Renu

This is certainly a handy recipe... one base for homemade ice cream and so many different flavours. Can't wait for summer to try out the vanilla and mango ones and some other flavours that we love, strawberry, pineapple.
