Beetroot and Carrot Yogurt Sandwich

One of the famous quote says “Don’t Judge someone based on their appearance. Looks can be deceiving”. This holds so true in every aspect of life. Say for example if you see any good pic of a food without knowing what is inside it chances are you might like it and vice versa. But on knowing the key ingredient you will think twice. One such vegetable is the humble Beetroot, a rich source of folate, but sadly it is not liked by many. Hence I always try to incorporate such vegetables or fruits in ways we would love to eat them and hence I decided to make this Beetroot and Carrot Yogurt Sandwich.



I was very fussy in eating Beetroot as a kid. We use to have salads for our lunch and the moment I saw Beet, I had to find reasons which use to go down the drain and the same goes with my kids now. If I serve them Beetroot directly they are definitely going to reject it. So the best option is to sneak it in different forms. Apart from its healthy benefits, I love this vegetable for one more reason. The natural dark pink colour it imparts to the food it goes into, simply awesome and the recipe prepared goes to a different level both in appearance and taste. So when I was paired in our group Recipe Swap Challenge with Jolly Makkar who blogs at Homemade Recipes, I immediately shortlisted her Beetroot Carrot Sandwich Recipe.  I loved the simplicity of this dish without losing the nutrients.


I just did a few changes to the recipe. Since we do not like or use Mayo, I use thick yogurt or hung curd. I do make a similar sandwich with only carrot and hence thought of replacing the mayo with yogurt. The other change I did was to add a few leaves of fresh basil, as I had this fresh basil in my kitchen garden. I was just imagining the flavour it will incorporate to Beetroot and I was right the sandwich turned out to be the yummiest I had. Rest the procedure is simple and is a very quick sandwich.


One can make this sandwich on a pan or a tawa too, I have used my grill toaster. I prepared 2 sandwiches for my lunch and I wanted to save one for my son after his school. I thought I will eat one and leave the second. But how mean I was to finish both of them :D. Yes I had to make another one for him.




Ingredients

  • 1/2 Cup Cooked Beetroot Grated or mashed
  • 1/2 Cup Grated Carrot
  • 2 tbsp hung curd/thick yogurt
  • 5-6 Basil leaves torn lightly (You can use coriander too)
  • Freshly grounded black pepper powder
  • salt to taste
  • 4 Bread Slices of your choice
  • 1-2 tbsp of butter

Preparation

  • For thick yogurt remove the yogurt in a strainer or a muslin cloth and let it strain for 2 hours at least or alternatively one can use Greek yogurt or cheese or mayonnaise
  • Mix all the remaining ingredients excluding bread slices.
  • Apply butter on all the slices on one side.
  • Layer the mixture equally among 2 slices of bread.
  • Cover it with another slice of bread.
  • You can enjoy this as is or toast them in a toaster or a pan.
  • Cut and serve.

Notes

  • Thick yogurt is the key to this or else the bread will get soggy. 
  • My bread slices are big, so you might end up making 3 from the ingredients.

Loved the recipe! I actually steamed the beetroot and carrot together. It was super yummy and i couldn’t get enough of it. Managed to make 4 sandwiches with this recipe
