Eggless Gulkand Muffins are flavourful, moist and the most delicious muffins you could ever have. Bursting with flavors from Gulkand aka Edible Rose Petal Jam and Cardamom and are nutty with a generous addition of pistachio.
I say these muffins as a fusion recipe as it adds the flavors from the East and the bake from the West. Though bakes in the East are also quite common.
Now these muffins or cakes are a regular affair in our house. I bake them a lot. This year for the Diwali party I baked it in a 9 inch round tin and it was a hit. Everyone loved it and was like this is one of the best cakes they ever had.
I first baked these cupcakes for Bread Bakers where Mireille Roc from The Schizo Chef was hosting the event for Bread Bakers.
Mirelle asked us to bake with edible flowers. It can be fresh flowers, dried flowers, preserved flowers, flower waters etc. I was finding it difficult to source edible flowers here (I did not have my edible flower garden earlier) and at the same time, I did not want to miss this.
Finally, a lot of thinking and google helped me to zero on this Eggless Gulkand Muffins. I always have gulkand at home. We use it as a mouth freshner or just as a mini dessert (just a teaspoon) to satisfy our sweet cravings.
I also make this Gulkand Ice Cream and it is always a hit at parties. So I decided to use this gulkand in bread. Many ideas crossed my mind on ways to use it. I might use it later, but today I thought of sharing these moist and delicious Eggless Gulkand Muffins.
What is Gulkand?
Gulkand aka Rose petal Jam is a sweet preservative made using rose petals and sugar. It is one of the most delicious ayurvedic preparations known. Gulkand can be easily prepared at home though the whole process can take around 4-6 weeks.
Gulkand has cooling properties and its consumption during the hot season is believed to be beneficial. It is commonly used as an ingredient in Paan (Beetel leaves mouth freshener). Gulkand peda, teas and drinks are very common in India.
Since I have never used gulkand in bakes, I was doubtful about how it will turn out. I am glad that I tried this. while taking pics, I was so tempted to eat it right away. The aroma of the sweet rose along with cardamom made me drool.

I have adapted this recipe from Sowmya’s blog (Bread Therapy) , with a few tweaks to the original recipe, by replacing the all-purpose flour with whole wheat and using Dark Brown sugar instead of normal white sugar.
Ingredients used in Eggless Gulkand Muffins
Flour – I have used whole wheat flour or Atta. One can replace it with all purpose or plain flour.
Oats – The next ingredient I have used is oats. One can use normal porridge oats.
Gulkand, another main ingredient, is used to flavor the cake.
Sweetener – Dark brown sugar is used as a sweetener. It can be replaced with sugar or honey.
Milk, olive oil and yogurt are used as wet ingredients and necessary fats.
Pistachio to add the necessary crunch and as nuts. One can skip it if required.
Baking Powder, Baking Soda and salt are used as leavening agents.

Eggless Gulkand Muffins #BreadBakers
Equipment
- Oven
Ingredients
- 1/2 Cup Whole Wheat flour
- 1/2 Cup Quick cooking oats/Porridge Oats
- 6 tbsp Dark Brown Sugar / Honey
- 1 tsp Cardamom powder
- 1/2 tsp Baking powder
- 1/4 tsp Baking Soda
- 1/4 tsp Salt
- 1/2 Cup Milk
- 2 tbsp Olive Oil or any flavourless oil
- 1/4 Cup Curd/Yogurt
- 3 tbsp Pistachios chopped finely
- 3 tbsp Gulkand / Rose Petal Jam
Instructions
- Preheat the oven to 175C
- Line a muffin tray with muffin cup liners
- Powder the oats finely in a blender
- In a large bowl sift in the Whole wheat flour, Oats flour, Sugar, Cardamom powder, Baking powder, Baking soda and Salt
- In a seperate bowl add in the milk, curd and oil.
- Add the wet ingredients to the dry and mix in to form a lump free batter.
- Fold in the chopped pistachios and Gulkand /Rose Petal Jam
- Pour into Muffin cups up to 3/4 full
- Sprinkle few dried rose petals on top if using
- Bake for 20 minutes or till a toothpick inserted comes out clean
- Cool it on a wire rack.
- Enjoy!
Notes
- 1 Cup = 240 ml, 1 tablespoon = 15 ml , 1 teaspoon = 5 ml
- Baking time may vary, depending on your oven.
- Baking time will vary depending on the size and shape of the tin.
