Oil-Free Instant Raw Mango Pickle is quick and easy pickle and uses just 2 main ingredients. One of my favorite pickle during summers. One of the simplest recipe one can make, it is oil free and stays good in fridge for around 5-6 days.

Making this pickle bring fond memories of my childhood. Where all the neighboring houses including ours use to get busy in making pickles during summer. Some pickles call for sun drying of the mango and we all kids use to love snacking on them. All of them knew that their 1/4th of the pickle would be gone by us little monsters. But still they use to let it dry by giving us stern warnings. haha 🙂
And as kids we use to not abide to them. Fun days I would say. Just remembering them makes me fresh. Hanging out endlessly all day outside during summers, enjoying all this pickles, the ice cream and the candies. Watching tv programmes with all your friends especially aired for kids was just pure fun. I know you too might have such memories. Do comment below, would love to read them.

Oil-Free Instant Raw Mango Pickle
So coming back to today’s recipe of, 4 ingredient Instant Raw Mango Pickle without oil , it is simple pickling of the mangoes. All you do is add some salt and turmeric and that’s it. Adding of red chilli powder or chopped green chilli is optional. I add the chili as it gives the spicy kick.
There are no exact measurements to this recipe. You add everything as per your taste. Do not add too much salt as when the mango absorbs and release liquid the pickle becomes too salty.

Once you add the ingredients give it a nice stir. In a matter of minutes or a 1-2 hours, it starts releasing water. You can enjoy this right away, or wait for a day for the mango to go a bit more soft.
Do not discard the water which is released. This is a good replacement for lemon. You have a spicy lemon juice that can be added in your dal’s, salads or just anything where you want lemon. I have even added this in one of my Indian Style Sprouted Mung Bean & Mango Salad.

This is my first recipe about any type of pickles. I make less pickles as always get it from my mom. My mom is a pickle queen. She makes so many different types of pickles. Mango, lemon, mix vegetables, gooseberry, hing and what not. Many are oil free and helps in digestion and are good for your gut. Hopefully one day I will make a collection of all her pickles here on my blog.

Pro tips for making pickles
- Make small batches of this pickle. Buy Firm green mangoes. They should be raw. Press them lightly, they should be hard to touch.
- Sterlise the jar you are using.
- The jar should be absoloutely dry.
- When making any pickle, make sure your hands, knife, plates, spoons and whatever you are using are clean and dry.

Oil-Free Instant Raw Mango Pickle
Ingredients
- 2 Raw Mangoes chopped into cubes
- Salt
- ¼ teaspoon Turmeric Haldi
- Red chilli powder to taste, Optional
- Green chili Chopped to taste, Optional
Instructions
- In a clean sterile bowl, add in the chopped Raw mangoes2 Raw Mangoes
- Add the turmeric and salt.¼ teaspoon Turmeric, Salt
- If adding red chili and green chili add it now.Red chilli powder, Green chili
- Mix everything and give it a good stir.
- Fill this in a clean sterile jar and close the lid.
- Let it sit for 30 mins -1 hour.
- You can enjoy this after 30 mins or as required.
- Store in the refrigerator.
Notes
- Make small batches of this pickle
- This pickle does not have any preservative in the form of oil. Always refrigerate and consume withing 4-5 days.
