It’s monday and it’s time for Foodie Monday bloghop and this week the theme is all about salad’s. I decided to use this superfood Horse gram along with some fresh veggies to make this healthy protein and calcium rich Sprouted Horse gram Salad.

You say salad and generally everyone run away from it. Specially the youngsters who feel it is the most boring food. The only thing that comes to people’s mind when you name salad is leafy greens and raw vegetables. Hold on…There are so many different varieties of salads and so many different types of dressing’s. Once you start exploring, I bet you would find an excuse to include them as one of your daily meal.

Ways of serving Salads

Salads can be served at any point of the meal as an Appetiser, Side Salad, Main course salads or as a dessert Salad. Main course Salad generally accompany a portion of high protein food and dessert salad’s are generally fruit based and may have fresh cream. Dressings are optional but again there are so many different types of dressings in salads that it takes each salad to a different level. Vinaigrettes based on a mixture of oil and vinegar or creamier one’s using milk products.

I use to not prefer oil in my salad’s so I generally make it giving a bit of my Indian Touch by adding some Coriander Chutney or Tamarind Chutney or using simple chat masala and lemon and making healthy and protein rich salad’s like, Kala Chana Salad (Black Chickpea Salad) or my Indian Style Sprouted mung Bean & Mango Salad and more.

What is Horse Gram

So coming to today’s recipe, I have used Horse gram here. Horse gram also called as gahat, muthira, kulath, kulthi, Kulith, Ulava etc etc is one of the lesser known beans. It is a rich source of iron, protein and calcium. Widely consumed in India since ancient times. In traditional Ayurvedic Cuisine it is considered a food with medicinal qualities. An excellent food for diabetics or as a part of weight loss diet. Ayurveda even recommends this for persons suffering from jaundice or water retention. (Source Wiki). I am not a health expert so not detailing much here, but a lot can be found on the Internet.

Sprouted Horse gram Salad

As today’s recipe says Sprouted Horse gram Salad, I have used sprouted Horse gram. Sprouted beans in general are more easier to digest and richer in proteins. I have written a detail post on how to sprout beans and legumes at home, the post can be found here.

The other ingredients are a simple addition to what I felt like adding to it. I added a bit of yellow pepper for the colour and the crunch, some shredded Iceberg Lettuce and lastly tomatoes to add some juicy texture. I have dressed it up with a bit of olive oil, freshly grated garlic, salt and lemon. Though I wanted to add some paneer when I planned this dish, but completely forgot about it :-(. Also there are no fixed measurements to this recipe, one can add as per liking.

Why Salad Today?

Well it is always good to include them in your diet to detox as well as to keep one light. Secondly it is monday it’s time for Foodie Monday bloghop. The #212 theme is #SaladStories and is suggested by Narmadha who blogs at Namscorner. Narmadha has a wonderful collection of recipes on her blog and she loves baking. Do hop on her blog for some creative ideas.

So Narmadha wanted us to create a salad which can be eaten as a main meal or as a side. I had a few ideas in my mind. However I wanted to use what was already there in my fridge. Hence I decided to make this Sprouted Horse Gram Salad.

Ingredients

  • 1 Cup Sprouted Horse Gram
  • 1/4 Cup yellow peppers chopped lengthwise
  • 1 tomato cut into cubes
  • 1/4 Cup Chopped Iceberg Lettuce
  • 1-2 fresh garlic grated
  • Lemon juice to taste
  • 1 tsp olive oil
  • Salt to taste
  • Freshly grounded black pepper to taste
  • 1 tbsp chopped mint and coriander + extra for garnish.

Preparation

  • In a large pot or a pressure cooker cook the sprouted horse gram just until tender.
  • I just used one whistle for the pressure cooker.
  • Once done, drain the excess water. The water can be used as a stock for gravies.
  • Add in the tomatoes, peppers, lettuce, olive oil, grated garlic, lemon juice, black pepper, chopped mint , coriander and salt.
  • Give everything a quick mix.
  • Garnish with coriander and lemon wedges and serve.

Notes

  • It is not necessary to cook the Sprouted horse gram. I do not like the raw taste and hence I cook it just until tender.
  • Any combination of veggies can be used here.

This salad is a real beauty. I do eat a lot of sprouted grains but I’m not sure I’ve ever had Horse gram before. It looks and sounds amazing. I need to find that as soon as possible ;-)
