Dudhi Kofta (Bottle Gourd Fritters)

Dudhi kofta are a yummy and delicious gluten free starter made using Dudhi or Lauki. Dudhi known as Bottle Gourd is not a favourite vegetable of everyone. Making them into fritters is a good way to sneak the vegetable in some fussy eaters.

Dudhi/Lauki/Bottle Gourd

Bottle gourd also called white-flowered gourd or calabash gourd. Is a running or climbing vines of the gourd family. The young fruits are edible and usually cooked as a vegetable. 


Recipes with Dudhi

We generally make a simple curry of this or the famous lauki channa from North India. Another interesting way of making this is dudhi kofta curry. Where this kofta are dunked in gravy made using yogurt and enjoyed with some hot rotis.

Dudhi halwa is a common dessert made using this vegetable and I often sneak it into different pancakes or breakfast items. Handvo is one such filling dish which is incomplete without Dudhi.

Dudhi Kofta

Coming to today’s recipe of Dudhi Kofta it is a simple dish made using grated dudhi mixed in besan along with some spices. They are then shaped into kofta on the go or if you prefer any shape and then deep fried. One can make a healthier version by baking this or making them in an appe pan, something similar to how I did here in Onion bhaji.

This go well as is or generally I make a curry. To be honest my family literally enjoy half of this as is. They are a perfect starter or a snack for evenings. They also go well as a side to any main meal. 

So here goes the recipe.

Ingredients

  • 1 Cup grated Dudhi/Lauki/Bottle Gourd
  • ½ Cup – or as required Besan (Gram flour)
  • 1 teaspoon Red chilli powder
  • 1 teaspoon Turmeric
  • ½ teaspoon Asafoetida (Hing) **Please see Notes
  • ½ teaspoon Cumin seeds
  • Salt to taste
  • Oil to fry

Preparation

  • Grate the Dudhi and squeeze out the water.
  • Do not discard the water, it can be used for any gravy or one can drink it as is.
  • Heat oil in a wok. The oil should not be too hot, or else you will burn the koftas.
  • In the meantime in a large bowl, add in the remaining ingredients and mix everything.
  • The batter should not be too watery. If you need more besan add it. It should be able to coat all the grated dudhi well.
  • Once the oil is hot, drop a dollop size of batter in the oil.
  • Fry this on medium until golden brown on both sides.
  • Serve with some tomato ketchup or as is or use it in a gravy.

Notes

  • 1 teaspoon = 5 ml, 1 tablespoon=15 ml, 1 Cup=235 ml
  • Asafoetida (Hing) powder available in shops contains wheat and is not gluten free. Gluten intolerant people can either skip completely or opt for Gluten Free Asafoetida (Hing)

The only time I've fried dudhi is to either make kofta curry with it or for the pakodas for the pakoda kadhi, never thought of enjoying them as a snack...silly right? Next time definitely going to make more batter so that we can enjoy them as bhajias. Nice way to get kids to enjoy dudhi.
