Dudhi Kofta Curry (No Onion No Garlic)

Dudhi kofta curry is a simple and delicious curd based, no onion no garlic Curry made using Dudhi Kofta. It is easy and lip smacking curry which can be enjoyed with hot phulkas, parathas or simple steamed rice in your everyday meals.

Dudhi/Lauki/Bottle Gourd

Dudhi or Bottle gourd also called white-flowered gourd or calabash gourd belongs to the gourd family. They come in variety of shapes. Huge, rounded, small and bottle shaped or long and serpentine. It is one of the healthiest vegetable with almost 92% water. (Source Internet). I have mentioned a few of interesting recipes with dudhi in my earlier post on Dudhi Kofta

Gourd family

Dudhi belongs to the gourd family. Gourd is occasionally used to describe crop plants in the family with more than 965 species. The most important ones of which are pumpkins, cucumbers, squash, Luffa and melons. The different types of gourds available in India are Sponge Gourd (Toorai), Bottle Gourd (Lauki/Dudhi), Bitter Gourd (Karela), Ridge Gourd (Dhodka), Snake Gourd, Ash Gourd, Little Gourd or Ivy Gourd, Pointed Gourd, Apple Gourd, Spiny Gourd etc.

This vegetables have a mix taking. Some like it and some do not. Specially difficult to feed them to the kids. But if you cook them in a different way, like this Maharashtrian Tendli Bhaat (Ivy Gourd Rice) may be it would be relished or sneaking them in different pancakes like in this, Vegetable Rava Pancake. Dudhi Kofta (Bottle Gourd Fritters)

So why I am talking about all this gourds? Well today is monday and it is the time for our weekly theme. This 220 theme for this week’s Foodie Monday is #GourdsAreBeautiful. This was suggested by Sujata ji woh blogs at Batter up with Sujata. She has a wonderful collection of recipes from around the world. Dudhi Kofta Curry

So coming today’s recipe of Dudhi Kofta Curry, it is a simpand quick recipe without onion and garlic. Sour Curd is used to make this gravy. Tanginess from the sour curd adds to the taste of the crispy koftas in this curry. This Dudhi Kofta curry can be enjoyed with some rotis or even with steamed rice.


Things to note while making curd based gravy

Few things to keep in mind while making any curd based gravy is that you would need to cook the curd continuously with constant stirring. If not done so, there are high chances of it getting curdled. It needs to be cooked till the masala is being cooked properly and it starts leaving the edges. Secondly add salt once the mix has come to boil or is cooked. This is my mom’s number one tip and I always keep that in mind. This is because, if salt is added in the start, there are high chances of it getting curdled.

In today’s recipe I am making a mixture of gram flour, curd and water. I am adding the required amount of water in the start itself. This helps in the curd not getting curdle at all as well the gram flour and curd cooked thoroughly. I have not added any green or red chillies as this dish is enjoyed by my kids, but one can add as per their liking. The consistency of this can be adjusted as per your liking. Sometimes we make it more watery and sometimes a bit thick.

No onion No Garlic Dudhi Kofta Curry

So here goes the recipe.


Ingredients

  • 10-12 Dudhi Kofta or as Required. (Click here for the recipe)
  • 1/4 Cup Besan (Gram flour)
  • 1/2 Cup Curd
  • 1/4 teaspoon Asafoetida (Hing) **Please see Notes
  • 1/2 teaspoon Red chilli powder (or as per taste)
  • 1 green chilly chopped (Optional)
  • 1/2 teaspoon Haldi (Turmeric)
  • ½ teaspoon Jeera (Cumin seeds)
  • 1 teaspoon Oil
  • 2-3 cups of Water (or as needed)
  • Salt to taste

Preparation

  • In a big bowl, mix in the Besan and curd and make a smooth paste.
  • Slowly add the water and make a lump free batter.
  • Do not add all the water in one go or else you would have a tough time mixing in the flour to get a smooth consistency.
  • Heat oil in a heavy bottom pot or a wok.
  • Once hot add in the Hing (Asafoetida) and Jeera (Cumin seeds)
  • Once the cumin seeds crackle, add in the besan and curd mix.
  • Let this mixture come to a boil on medium, stirring almost every 30 seconds.
  • Once it comes to boil, reduce the flame.
  • Add in the chillies if using, salt and the koftas.
  • If required add more water. Let this simmer for 7-8 minutes.
  • Switch off and let it rest for 5-10 minutes.
  • Serve hot with some roti’s.

Notes

  • 1 teaspoon = 5 ml, 1 tablespoon=15 ml, 1 Cup=235 ml
  • Asafoetida (Hing) powder available in shops contains wheat and is not gluten free. Gluten intolerant people can either skip completely or opt for Gluten Free Asafoetida (Hing)
  • Adjust the consistency as required.
  • The kofta’s do absorb a bit of water so adjust the consistency as required.
