Apple Granola Overnight Oats

Breakfast is one of the most important meal for me. I try to make sure that everyone in my family eats something and does not leave the house empty stomach. I try to make fresh breakfast every morning, but that said it is is not possible everyday. The morning rush on weekdays is crazy at times when we all have to leave for office and kids to school and on time. Specially Monday mornings, and I know you all agree with me. So I thought of having some breakfast pre-planned a day before and decided to make this delicious and healthy Apple Granola Overnight Oats.

As said in my earlier post on my Homemade Granola, I am not a person who enjoys oats in sweet form or in milk. I do cook oats in many of the savory recipes, so I had to make a recipe which combines the best of both the world. That is having something healthy and not sweeter too. So I decided to make this Overnight oats, but with granola. My granola has a bit of crunch as it is baked and loaded with nuts and seeds. And instead of soaking them in milk I used my homemade Greek yogurt, which is not sweet. I did not add any sweeter here, as my homemade granola have some honey in it, but one can add a bit of honey if required.

I also added a bit of green apple and cinnamon to add to the crunch and flavour. The oats did not go too mushy at all. To my surprise I was enjoying this as my breakfast and have already made 2 more types of Overnight oats. Another good thing about this is that it keeps you full and I am not just saying for the sake of it, it really does. So if you are on a weight loss journey, you know what you have to do.

So here goes the recipe:


Ingredients

  • 3/4-1 Cup Plain Greek Yogurt
  • 1/2-3/4 Cup Granola
  • 1/2 Cup Chopped Apple (Green/Red)
  • 1/4 tsp Cinnamon

Instructions

  • In a small bowl, add in the chopped apple and cinnamon and give it a quick mix.
  • In a Mason Jar or a wide glass, add in 1/4 Cup of Greek Yogurt.
  • Top it up 1/3 of the Granola
  • Add in half of the apple.
  • Repeat with remaining Greek yogurt and Granola.
  • Top it up with remaining Apple and garnish with more cinnamon if required.

Notes

  • One can do the layering as required. There are no strict rules
  • One can add honey or a vegan sweeter to make the yogurt a bit more sweet if required.
