We Love Lassi. The plain yoghurt lassi is something that is loved by my family. And I love to add different flavours and textures to make it into something different.
The Theme
I had this avocado lying around and I was thinking of making a lassi out of it. Coincidentally for this week’s Foodie Monday Mayuri Ji announced the #239 theme as Cool Lassi, I was sure what I was making. And what a coincidence Mayuri Ji too prepared a lassi, from Avocado, i.e. Avocado Mint lassi but the flavours are completely different. Do check her blog for various different traditional and yummy recipes.
Flavour used in Lassi
So coming to today’s recipe, at first I thought I would add some mint and chilli. But I wanted this typical Indian flavour and it won. So what did I add for the Indian Flavour? Kewra Water. I just love this and it is like our Indian Vanilla essence. Few drops of this in any sweet dish enhances the flavour and take it to the next level.
So what is Kewra Water?
Kewra, keora or Kewda water is an extract from the flowers of the Pandanus tree. The plant is native to South Asia. Used as a flavouring agent and comes in as a transparent liquid. It is much more used in the northern part of India.
Where is it Available?
It is generally sold in glass bottles and is available in Asian Shops. One can even shop online for the same.
Uses of Kewra Water
As said earlier it is mainly used as a flavouring agent. Bengali Mithai like Rasgulla are at times dipped and soaked in Kewra water to give it more flavour. I even love to add it in Biryanis adds a rich aroma to it.
The main Ingredient Avocado
The main ingredient of this recipe is Avocado. As you all know Avocado is a fruit that is rich in healthy fats. It is naturally creamier and a rich source of fibre and potassium. I love to eat avocado on its own with a bit of salt and pepper or to make an Avocado Guacamole and use it as a spread.
Avocado Recipes
As it is rich in fat it is also a great substitute for butter. I have made this Whole Wheat Avocado Banana Muffins where Avocado is used instead of Butter. And when I want to indulge in a somewhat guilt-free dessert I make this Avocado Chocolate Mousse or this No Bake Avocado Cheesecake.
Is the Avocado ripe?
The biggest problem with Avocado is that we are not sure if it has ripened or is still unripe. I bring a mix of somewhat ripe and unripe avocados. This helps as they all do not ripe at the same time. Then I first check if the skin has turned dark green. Then I slowly try to create a thumb impression. If I can see the thumb impression, it is ripe, else not. (I will share pics next time).
Today’s recipe for Avocado Lassi is very simple. Just add all the ingredients to the blender and make a smooth puree.
