Instant Green Apple pickle is an instant version of pickle inspired by numerous pickle recipes of India. Yes throughout India we have numerous different types of pickle recipes across different cuisines. Since the apple season is at its peak I decided to make this Instant version of Green Apple Pickle.

Pickles
A north Indian loves pickle’s or I would say every Indian love pickles. Every household will have some or the other type of pickles. My mom loves making pickles and she makes pickles of vegetables, fruits, spices with and without oil. She has a collection of more than 50 different recipes. Many of this pickles are healthy and helps to keep the fight the bad bacteria in your gut. I have yet to start writing and saving those recipes. Hopefully I do it sooner.

So What made me make an Apple Pickle?
This week Kalyani from Seduce your Tastebuds announced the theme for this Monday’s Foodie Monday bloghop as #210UltaPulta. She challenged us to think out of the box and make something different from the usual we do with any ingredient.
For Example a sweet as a savoury or a savoury as a sweet. The challenge was a bit difficult as I did not wanted to make anything sweet. The only thing that was coming to my mind was converting chocolate to savoury. I had few ideas with it, but then last week my son had picked this fresh green apples along with his friend from a farm. I am so thankful to my friend for sharing this fresh green apples from the farm.
What can be done with green apples? Yes there are loads of recipes for crumbles, pie’s, smoothies etc. Even I have shared this Fudgy Apple Brownies and Sugarless & Vegan Apple and Carrot Loaf earlier and as I said earlier I did not wanted to make sweet, I was thinking of other options.
Instant Green Apple Pickle
I have seen a few ideas earlier on making a pickle with apple and hence thought of giving this a go. I have simply used Ready pickle masala and mustard oil as a preservative. One can enjoy the pickle almost after 1-2 hours, but it is best to wait for a day or two, for the apple slices to soak in the masala and the oil.
Storing
Store this in the refrigerator in an air tight container for longer shelf life. If you can consume it in a 3-4 days it would be good on the shelf. But anything more than that, it is best to be refrigerated.

Ingredients
- 500 gm Green apples
- 100 gm Ready Masala Mix
- 130 gm Mustard Oil
Preparation
- Thoroughly wash the green apples and wipe it dry with a clean kitchen towel.
- Leave the apples on the clean towel for an hour. This helps to dry the apples completely.
- When you are ready to make the pickle, in a clean and sterile pan or a pot heat the oil.
- Let it come to smoking point and let it cool completely.
- Now cut the apples into 1 cm pieces along with the skin. (You can peel if required).
- You would need to be quick as the apples would start turning brown.
- Add the ready masala to the apples and with a clean and sterile spoon mix everything.
- Once the oil is cooled completely, add the oil to the apple masala mix.
- Mix everything and set it aside in a clean and sterile container.
- Cover it with a lid.
- After an hour or so , give it a quick mix again.
- You can enjoy this at this stage or let it rest for 1 day.
- After a day fill this in a clean and sterile jar. Enjoy
Notes
- Everything should be clean, Sterile and dry when making a pickle.
- Always use a clean spoon when taking out pickle from jar.
- Refrain from putting your fingers or your hand in a pickle jar. It spoils the pickle.

Renu the pickle looks so delicious. I am not reading the recipe as I will start craving it and I have to avoid pickles totally for some time. But I can imagine the flavor n how yummy it will taste. Actually drooling over the thought. When I am allowed I will come back to read and make this yummy green apple pickle.
