Coconut Flour Orange poppy seeds muffins (Gluten Free)
I am trying to bake with alternative flours nowadays. Reasons being, Trying to have more of healthy foods or using gluten free flours to share recipes with friends who are allergic. Coconut flour has now found a place in my pantry. I decided to make this delicious Coconut Flour Orange poppy seeds muffins which are naturally Gluten free.

This Coconut Flour Orange poppy seeds muffins are Gluten Free, Dairy Free and Nut Free. They are low in Carbs and are light and fluffy with orange flavour. They do not have any white sugar, but uses honey. Adding citrus based foods to your baked goods impart a lovely taste. I am a big fan of Lemon and Orange in bakes. I am pretty new to coconut flour baking and hence will not comment much on how it has to be used etc. As that will come by experience. But yes coconut flour absorbs a lot of liquid and it needs a good binding. At first my batter looked quite runny, but within few seconds, I could see all the liquid being absorbed. As if it was a liquid soaking monster. 😀

This was my first trial with coconut flour and I was not sure of how it will turn. I was very sure as it might taste coconut, as I do not like the taste of coconut in bakes. But no we could not even sense that. The only thing was that the texture of the bake was a bit grainy, but kid's did not mind it.
Everyone say coconut flour is tricky to work, etc etc. I did not feel though or probably my first ever bake, my Coconut Flour Orange poppy seeds muffins turned out the best. My toddler, in every bite was like delicious, yummy. She could not even wait for me to take pics. She was like mumma I am hungry. 😀😀 And mind you, she is not a cake lover like me and my son 🙁.

Anyways the short story was everyone in my family liked it. This Coconut Flour Orange poppy seeds muffins turned out to be one of my best bakes I was like why did I not try coconut flour before. I took 2-3 muffins in office and my friends enjoyed too. So you know which type of recipes are coming up next.

I was being tempted to use coconut flour in baking after seeing the bakes of a friend blogger, Gayathri, who blogs at Gayathri's Cook Spot. She has a wonderful collection of bakes and specially with alternate flours. Thank you Gayathri for tempting me to start the bakes with Coconut flour.
I am sharing this recipe for the theme "Follow the Italian Meal Structure". My earlier recipe on this theme was, "Eggless Whole Wheat Chocolate Cupcakes". I have adapted the recipe from DetoxInista, with my modifications.
Ingredients
Coconut Flour Orange Poppy Seeds muffins
- ¾ cup coconut flour
- ¾ cup Honey/Maple syrup
- ¼ cup melted Vegetable oil (One can use coconut oil)
- 6 tablespoons freshly squeezed Orange juice
- Zest of one large whole Orange (about a teaspoon)
- ¼ teaspoon salt
- 1 teaspoon baking soda
- 6 eggs , at room temperature
- 1 teaspoon vanilla extract
- 2 tablespoons poppy seeds
Orange Drizzle
- ½ Cup Icing Sugar
- ¼ Cup Orange Juice
Preparation
Coconut Flour Orange Poppy Seeds muffins
- Preheat the oven to 180 Deg C or 350 Deg F and line a standard muffin tin with 12 baking cups.
- In a large bowl, Sift the coconut flour, baking soda, salt.
- Add in the Eggs, Honey, oil, Orange juice, Zest and Vanilla extract.
- Whisk to make a lump-free batter. Coconut flour tends to have lumps, so be sure you whisk the batter really well.
- Stir in the poppy seeds, then divide the batter evenly among the 12 baking cups.
- Bake at 180 Deg C, until a toothpick comes out clean. About 20-25 minutes.
- One can enjoy them as is or use an Orange Drizzle.
Orange Drizzle
- Mix in the Icing Sugar and Orange Juice.
- Allow the cupcakes to cool completely.
- Drizzle the Orange Juice on top as desired.
Notes
- If your oven is very hot, do reduce the temperature by 5-10 Deg.
- Oven time varies for baking , do keep an eye after 15-20 minutes.

These muffins would definitely qualify as high in protein muffins with 6 eggs in it. I've yet to work with coconut flour but my niece using it often and says its pretty easy to use. Muffins look so moist and tempting, with orange flavor.

I made these half and hour ago and they’re delicious. I completely forgot to add the coconut oil but it turned out great nonetheless, maybe one can skip the oil in that case. I added around 1 tsp ginger powder and threw in crushed almonds. Also halved the recipe to yield 5 regular sized muffins, maybe the addition of coconut oil would have helped get 6. Thanks for the easy and healthy recipe, Renu. I will avoid the orange drizzle due to the sugar.
Yes oil will increase the volume a bit, but good to know that it worked without it and thank you for your feedback. Yes orange drizzle is optional , sometimes kids love it.
You never mention how you treat the eggs in the instructions. In fact you dont even add the eggs in the instructions

Yes. I see them in ingredients list but not in the instructions. Do you separate them. Do you add them whole. Some recipes you beat the egg whites separately to add air. I was just curious why they weren’t in the instructions like I said I know they’re in the ingredients
Hi, third instruction from too, add the eggs , honey etc... you add them whole here and just mix it in the batter. Please check the images for help.
