What is Peda/Pedha/Penda/Pera?

Peda is a sweet dish from the Indian Subcontinent. It is sweet which has a semi-soft texture or at times a bit chewy. The main ingredients used are khoya (Mawa), sugar and traditional flavourings like cardamom, nuts etc. There are a lot of variations to the peda and a lot of fusion recipes do exist such as a chocolate peda. It is also called as pedha, penda or pera.

Wiki says that the pedas originated in the city of Mathura. My native being Mathura, I am very much fond of the typical Mathura peda. We do have a special store in Mathura were my parents always buy them. The semi-soft and melt in mouth pedas of Mathura are super tempting and I always have 2 in a row :-). Have not had them now for quite a lot of time 🙁

Coming to today’s recipe, I actually made this for last Diwali. Diwali means a lot of preparations and a lot of food. We had a get together planned at the last minute and I had to take something along with me which would serve as a gift as well add to the dinner table. Had no time to go into the shop and buy something and that’s when I decided to try something homemade.

Caramel and milk powder were already lying in my pantry. A quick google made me land on this recipe. I loved her recipe as it was a quick version when you are running out of time and have all the ingredients. Today I realised I have taken this recipe from Mina Joshi’s blog, who is now a good blogger friend of mine. Do check her blog out for some wonderful recipe ideas.

I thought of sharing this recipe for the upcoming Raksha Bandhan festival as I am again going to make a batch of this. My son loves peda and let me pamper him with this moist and tempting, Microwave Caramel Coconut peda. He like other brothers complains that why sisters get a gift, so I always make a sweet which he likes. A win-win for both, though he also gets a gift :-).

Microwave Caramel Coconut peda

So coming to today’s recipe of Microwave Caramel Coconut peda, all you have to do is dump all the ingredients into a microwavable safe bowl. (Glass preferred). Mix everything and microwave it in a short burst of 1-2 mins each. After every 2 mins, you remove the bowl stir everything again and back for 2 mins. When you are towards the end of the cooking process, around 9 mins go for 1 min intervals. In all, I took around 11 minutes for my mixture to get ready and have a perfect consistency. Let the mixture now cool completely for 1.5-2 hours and then you can shape it as desired.

PS: Many of us are against microwave cooking and do not prefer to cook much in it. But this recipe comes in handy when you are really struggling for time. You can always try this on a stove or your hob. Just do the cooking on slow and it should work. 


Replacement for caramel

If you cannot find caramel, you can replace it with an equal amount of condensed milk. I use whichever I have in my pantry. The taste slightly differs but both are equally good. The below modak is made using Condensed milk.

Shelf Life

These Peda’s have a good shelf life. They stay good for 15-30 days when refrigerated. 15 days I am saying for people in humid in warmer climates. In a cold climate, it can easily stay fresh for 30 days. So these are perfect edible gift ideas for festive occasions.

Equipment

Ingredients

  • 1 Can (397 gmCaramel condensed milk (one can even use simple condensed milk)
  • 400 gms Milk powder – 4 Cups
  • 3 tablespoon of ghee/Clarified Butter
  • 100 grams desiccated coconut – 1 Cup
  • 200 ml milk – 3/4 Cup
  • 2-3 pinches of saffron
  • 1 tsp ground cardamom
  • 10-12 almonds flakes or sliced for garnish

Instructions

  • In a large microwave safe bowl add all the ingredients except almonds.
    1 Can (397 gmCaramel condensed milk, 400 gms Milk powder, 3 tablespoon of ghee/Clarified Butter, 200 ml milk, 2-3 pinches of saffron, 1 tsp ground cardamom, 100 grams desiccated coconut
  • Mix everything with a spatula and cook in microwave on high power for 2 minutes.
  • Remove and stir.
  • Repeat the process in batches of 2 minutes and at the end of 8-9 minutes in batches of 1 minute.
  • Repeat until mixture resembles a semi stiff mass. It should take around 11-12 minutes depending on your microwave.
  • Let the mixture cool down for at least 1.5-2 hours.
  • Once cooled, shape it into desired shape.I simply made it in peda shape, and then formed an indentation on the top and decorated with almond flakes.
    10-12 almonds flakes or sliced for garnish

  • Store this in an airtight container in the fridge. When stored in the fridge they stay good for at least 2 weeks.

Notes

  • 1 Cup = 235 ml, 1 tablespoon = 15ml, 1 teaspoon = 5ml
  • When cooking in a microwave always use short burst of cooking. The food might get cooked fast and it might burn.
  • One can use 1 min of burst instead of 2 mins.
  • One can even use simple condensed milk instead of caramel condensed milk. The taste would change as it will not have the caramel flavour

I have tried chocolate peda in microwave and it surely comes handy when we are running out of time. Never seen caramel condensed milk in shops here. caramel and coconut is yummy combo. Peda looks so delicious and tempting. Love the cute design you have made on pedas.
