Sprouted Wheat Flour No Knead Bread #BreadBakers

Sprouted Wheat Flour No Knead Bread is an easy peasy healthy bread that can be assembled in 10 minutes or less. It does not have any yeast, egg and requires no kneading at all. All you do is mix the ingredients and bake the bread.

What is Sprouted Flour?

Sprouted grains is used to make Sprouted Flour. This includes not only wheat but all different types of grains such as spelt, amaranth, rye, corn, buckwheat and many more. As the name implies sprouted grain is a grain that is allowed to sprout and begin to germinate. Traditionally the grains were sprouted on the stalks itself in the fields before harvesting. But modern methods and to produce large quantities of grains this step is lost.

What does Sprouting does?

Sprouting any grains helps the body as the flour becomes easy to digest. They have more protein and fiber than content than normal unsprouted grains. This flour has a slight nuttier and rough texture compared to the normal wheat flour. One really can understand the difference. If you like rustic, wholemeal bread you will certainly like the bread made with sprouted flour.

I have used Coarse Whole Milled Whole Wheat Sprouted Flour for this bread. As the name implies, the flour is coarse. I did experimented with a pizza for my kids with this flour. I used a combination of whole wheat and sprouted whole wheat in the ratio of 1:1. Was pretty nervous of the outcome as I knew it was not their usual pizza base. But my kids loved it. 


Sprouted Wheat Flour No Knead Bread Recipe

For baking this Sprouted Flour Bread I used 310 grams of sprouted flour and 170 grams of whole wheat flour. I added whole wheat flour only as my sprouted flour was coarse. Had I used fine milled, I would have used 100 percent Sprouted Flour. I have used the recipe from here with a few modifications. I have used flax egg instead of egg but one can simply substitute with an egg.

The bread had a rustic taste. Something which I get in traditional old style restaurants here with my soup. I simply loved it. I smeared some Chutney, layered a bunch of rocket leaves and tomatoes and enjoyed as an open sandwich. This bread freezes well, so cut into individual portions and freeze. Pop in the toaster when needed.

Why I am using Sprouted Flour?

I am not sure when would have I explored this flour had it not been the Bread Bakers challenge. There is so much to learn and hence I love this group. Sue Lau from Palatable Pastime asked us to use Sprouted flour for our bakes this month.

It was a challenge getting the flour. At first I assumed I would easily get in the health food stores, but it was not. I almost gave up but then Sue Lau pointed me online shopping. Unfortunately due to December and online shopping not that great here, I completely forgot about it. But thankfully I could source it just last Friday and I baked the bread immediately on that night itself.

I did had a backup bread made using Malted whole Wheat flour (Recipe coming soon hopefully). Another rustic and healthy bread which was equally enjoyed by my family. Thank you Sue Lau for giving us the challenge. I have another healthy flour in my pantry now.


Can you Sprout at home and make the flour?

Yes you can sprout the flour and make the flour. For sprouting one can follow the same process as followed to sprout beans etc. If you want to check how to Sprout check the link here. To make the flour you would need to make sure that sprouted grain is thoroughly dried. Either Sun dried or dried in oven. If there is any moisture left in the grain it will be spoiled. I have yet to make sprouted flour at home, if I do I will create a post of the same.


Where is Sprouted Flour available?

Sprouted flour should be available in health food stores or online. I used Organic Whole Wheat flour sourced locally.


Here goes the recipe for Sprouted Wheat Flour No Knead Bread

Ingredients

  • 310 grams of Coarse Milled Sprouted Whole Wheat Flour
  • 170 grams of Whole Wheat Flour
  • 2 tablespoon of Flaxseed Powder
  • 3 tablespoon of Lukewarm water
  • 1 teaspoon Baking Soda
  • 1 tablespoon of Olive Oil
  • 1 tablespoon of Honey
  • 430 ml of Buttermilk
  • 3 tablespoon of Seed mix (I used Sesame, Sunflower and Pumpkin Seeds)
  • Salt to taste

Preparation

  1. Preheat the oven to 200 Deg C
  2. Grease a 2 lb loaf tin (8 * 4* 3 inches) with oil and line it with parchment paper.
  3. Lining with parchment paper is optional, but since the bread is dense it is advisable as it would be easy to remove.
  4. In a small bowl add 2 tablespoon of Flaxseed Powder and 6 tablespoon of Lukewarm water. Give it a mix and let it sit for 10 minutes.
  5. To make the buttermilk, take 420 ml of milk and 2 tablespoon of Lime Juice or Vinegar and give it a mix.
  6. In a big bowl, add in the Sprouted Whole Wheat flour, Wheat Flour, Baking Soda, salt and 1 tablespoon of Seed mix.
  7. Mix it and now add all the wet ingredients, i.e. Buttermilk, Honey, Flax meal and Olive oil.
  8. Mix and pour the mixture into the baking tin.
  9. Sprinkle the remaining seed mix on top of it and bake in a preheated oven for 60 minutes.
  10. The bread is done when a toothpick/knife inserted comes out clean.
  11. Leave it to cool on a wire rack. 

Notes

  • 1 Cup = 235 ml, 1 tbsp= 15 ml, 1 tsp = 5 ml
  • Any combination of seeds can be used or can be left out completely. Flaxegg can be replaced with egg.
  • Maple Syrup can be replaced with honey for Vegans.
  • Do keep an eye on the bread after 45 minutes, as ovens differ.
  • Baking time varies with the baking tin.
