These crackers is a beginner-friendly recipe that is easy to make. It is a one-bowl recipe, where you mix all the ingredients, roll out the dough, cut the crackers, and bake. Yes, believe me, try it and thank me later 😊.

Again I had loads of chives in my garden and was looking for where I could use it. I already use them in my pancakes, Tofu Avocado and Chives Spread, or this Gluten-Free Millet Chives Flatbread. But I wanted to make something different. I want to make a snack that I can eat in the evening or just as is. So I made these Chives and Cheese Almond Crackers.

I decided to make it gluten-free and hence Almond Crackers. I have used almond flour in this recipe. The flour adds its own richness to the crackers. They are also crisp due to the almond flour.

Ingredients used in Keto Cheese and Chive Crackers

The first main ingredient used in Almond Flour. Other nut flours will work too. I have not made this with any other gluten-free flour as of now, so cannot comment much on that.

I have used mascarpone cheese in these crackers. It adds a natural moistness to the dough and we do not need any extra water or binding for this. One can replace this with cottage cheese, or any soft cheese.

I have used some fresh garden chives in this recipe. Dry chives will work too. If using dry use less as the dry would have strong flavour.

Next, I used garlic granules for that garlic flavor. Red chili flakes are added for the spicy kick. One can skip this if required. Salt for flavoring.

Keto Cheese and Chive Crackers (Gluten-Free)

These Homemade, crunchy, savory Keto Cheese and Chive Crackers are gluten-free and incredibly easy to make with just a few ingredients.

Ingredients

  • 1 Cup almond flour
  • 10 grams Chives – 2 tablespoons of Chopped chives
  • 35 grams Mascarpone Cheese
  • ½ teaspoon Salt
  • ½ teaspoon Garlic Granules
  • ½ teaspoon Red Chili Flakes

Instructions

  • Pre-heat the oven to 250 degrees F – 100 Deg C
  • In a large bowl add all the ingredients.
    Dough for Keto Cheese and Chive Crackers.
  • Mix well and make a dough.
    Cracker Dough in a bowl.
  • Take the dough on a parchment paper.
    Cracker dough ready to be rolled on parchment paper
  • Put another parchment paper on top and roll it.

  • Remove the top parchment paper.

  • Cut the dough into shapes as desired using a knife or a cookie cutter.
    Crackers rolled and cut ready to be baked.
  • Remove the edges to get even cuts.
  • Remove the cuts, make a dough ball and repeat the above process.
  • Put the parchment paper along with the crackers and bake it for 50-60 minutes.
  • At the end, if not done, increase the temperate to 150 degrees C and bake it until golden brown (5-10 minutes)

  • One can turn it upside down to get even baking.
  • Once done remove and let them cool completely on the baking tray.

  • Once cooled, store them in an air tight container.

Notes

  • Standard US-size cups used. 1 cup = 235 ml, 1 teaspoon=5ml, 1 tablespoon = 15 ml.

These keto cheese and chive crackers are certainly guilt free snacking option. Like that no flour is used. And am guessing one can use herbs of their preference. Did you bake them on low heat so that the almond flour does not burn?
