Spicy Mint and Coriander Quinoa Pulao
Spicy Mint and Coriander Quinoa Pulao is a very simple and easy one pot meal made using Quinoa. Quinoa is a relatively new grain for the Indian taste buds and it appears to be a bit bland for many. They either do not like the taste or do not know how to use it.

My first attempt with Quinoa was of Quinoa Pulao with vegetables. I simply added a bit of vegetables with different spices and made it the Indian style. I made it with the Indian Touch to adapt to our taste buds. Then I tried this vegan, Gluten free and Dairy free Qunioa Chia Multiseed Bread. This bread was fuss free without any kneading and no yeast at all. It is one of my go to breakfast during the weekdays.
So what is Quinoa
Quinoa is an annual seed-producing flowering plant grown as a grain crop. Quinoa is gluten-free and is rich in protein, dietary fiber, Vitamins and minerals. It is said to aid in weight loss and is a good replacement for those looking to replace Rice in their diet.
So while I was looking for more recipes from this humble grain, I landed on my blogger friend Veena's recipe Spicy mint Qunioa. I immediately shortlisted this to include in this series.

What I liked about this Spicy Mint and Coriander Quinoa Pulao recipe is it is very simple and quick to make with very few ingredients. All I need is to make a spicy paste of mint and coriander and mix it along with quinoa, to make a delicious Spicy Mint and Coriander Quinoa Pulao.
So here goes the recipe:
Ingredients
- ½ cup Quinoa
- 1 cup Water
- ¼ cup Mint
- 2 tablespoon Coriander
- 2 Green chiily
- 1 Onion finely chopped
- 1 clove garlic finely chopped or grated
- ½ inch piece Cinnamon (Dalchini)
- 1 Clove (Long)
- 1 tablespoon Oil
- Salt to taste
- Cashew for garnishing
Instructions
- Wash and rinse the Quinoa.
- Soak it in enough water for 30 minutes.
- Drain and pressure cook it with 1 Cup water for 3 whistles.
- I did pressure cook in Instant pot for 2 minutes.
- Once the pressure settles, remove it.
- Drain the excess water and spread it on a large plate to cool.
- Grind the mint, coriander and green chillies with just enough water to make a smooth paste.
- Heat oil in a pan.
- Once hot add the cinnamon, cloves and saute for a few seconds.
- Now add the chopped onion and garlic and saute for a few seconds.
- Next add in the mint , coriander paste and cook it so that all the water evaporates.
- Now add the quinoa, salt and gently mix everything so that the masala gets incorporated.
- Garnish with cashew and serve.
Notes
- 1 Cup =235 ml
- 1 tablespoon =15 ml.

Quinoa is a adapted taste , so making it Indian style works the best . The spicy mint paste must have mendedquinoa a great flavour . The pulao has got such a beautiful green .
I like quinoa and enjoy it in all forms. Most of the times I cook it plain and eat it in place of rice. This mint coriander pulao definitely sounds flavorful and tasty.
The mint-coriander paste works wonders to any dish. This one with quinoa sounds just as wonderful.
Mint and coriander gives lots of flavors to the dish they are added in. I can imagine how flavorful and tasty this pulao would have been.
Quinoa surely takes time to get used to. When I had made it it was eaten more as a salad than as a rice replacement. Your version with mint looks so good.

I haven't yet tried quinoa and I am not sure whether I would cook it perfect. Love the vibrant colour of the pulao and definitely a nutritious meal.
