Caprese Sourdough Sandwich With Basil-Coriander Chutney
A good sandwich can turn a few fresh ingredients into a lunch you'll look forward to. This Caprese sourdough sandwich pairs buttery toast with ripe tomato, creamy mozzarella, crisp greens, and a lively basil-coriander chutney. The chutney gives the familiar Italian combination an Indian-style twist.

It's quick enough for breakfast and satisfying enough for lunch. Serve it freshly assembled for the crispest greens, or warm it when you're in the mood for melted cheese. The first step is gathering ingredients that taste good on their own.
What You'll Need for a Caprese Sourdough Sandwich
The filling takes its cue from classic Caprese salad, which pairs tomato, mozzarella, basil, and olive oil. Here, basil goes into a green chutney with coriander and green chilies. Choose a tomato that's ripe but still firm enough to slice neatly.
Sandwich ingredients
Gather these for the bread and filling:

- Fresh mozzarella, sliced thinly.
- Ripe tomatoes, cut into even slices.
- Lettuce or baby spinach, washed and dried.
- A little butter for toasting. (I did not use any, as I toasted it in the toaster)
- Olive oil, salt, and freshly ground black pepper for finishing.
Green chutney ingredients
You'll blend these into a spread for the bread:
- Fresh basil and coriander.
- Ripe tomato to give the chutney body.
- Ginger and garlic for their warm, savory flavor.
- Green chilies and salt, adjusted to your taste.
- Optional lemon juice for a brighter finish.
Keep a little water nearby for blending. Add only what the blender needs; the chutney should spread easily without running off the bread.

Ingredient swaps that still make a great sandwich
Regular sandwich bread works if you don't have sourdough. Toast it until the surface is firm enough to hold the chutney. Baby spinach is an easy swap for lettuce, though lettuce gives you more crunch.
Fresh mozzarella brings the mild, creamy flavor that makes this a Caprese-style sandwich. If you avoid animal rennet, check the package for vegetarian-friendly enzymes. For a milder chutney, start with less green chili and taste before adding more.

Make the Basil-Coriander Chutney Fresh and Spreadable
Rinse the basil, coriander, and tomato under running water, then dry the herbs well. Dry herbs also give you better control over the chutney's thickness.
Add the basil, coriander, tomato, ginger, garlic, green chilies, and salt to a blender. Blend until smooth, adding water a little at a time only if the blades need help. Stop and scrape down the sides rather than pouring in water all at once.
Taste the chutney before spreading it. Add more salt if needed, or a little lemon juice if you'd like extra brightness. It should be thick enough to coat a spoon: a thin, watery chutney will soften toasted bread quickly.

How to Assemble the Caprese Sourdough Sandwich Recipe
Prepare the fillings before you toast the bread so you can build the sandwich while it's warm. Slice the tomato and mozzarella thinly, and make sure the greens are dry.
Toast and layer the sandwich
Warm a skillet and toast the bread with a little butter until the outside is golden and lightly crisp. Let the slices sit for a moment so steam doesn't collect under the chutney. Alternatively, you can directly toast the slices in the toaster. Butter is not required at all.
Spread basil-coriander chutney over the bread. Add lettuce or spinach, followed by tomato slices and thin slices of mozzarella. Season the filling with salt and black pepper, then drizzle lightly with olive oil. Close the sandwich, cut it in half, and serve.
Prefer melted cheese? Assemble the sandwich first, then warm it in a toaster oven or skillet until the mozzarella softens. A skillet gives you more control over the bread's color. If you want the greens to stay especially crisp, tuck them in after warming.
Keep the bread crisp and the layers balanced
Very juicy tomato slices can make even well-toasted sourdough soggy. Blot them gently with a paper towel before layering, especially if the sandwich won't be eaten right away.
Use a moderate amount of chutney, enough to taste in each bite without saturating the bread. Place the greens between the spread bread and the tomato to create a small barrier. Thin mozzarella slices also make the sandwich easier to close and cut without pushing the filling out.

- 1.5 cup fresh Coriander cilantro
- 1 small ripe Tomato chopped
- ½- inch piece Ginger
- 2 small Garlic clove
- 2-3 Green Chili to taste
- Salt to taste
- Water only as needed to blend
For the Sandwiches
- 4 slices Sourdough bread
- 1 teaspoon Butter for toasting (optional)
- Fresh mozzarella thinly sliced (as required)
- 1 medium ripe tomato sliced
- 1 cup Lettuce or baby spinach washed and dried
- 1 teaspoon Olive oil
- Salt to taste
- Freshly ground black pepper to taste
Instructions
- Make the Chutney.
- Blend the basil, coriander, chopped tomato, ginger, garlic, green chili, and salt until smooth.
- Add water a teaspoon at a time only if needed.
- The chutney should be thick enough to spread.
Prepartion for Sandwich
- Slice the mozzarella and tomato.
- If the tomato is very juicy, blot the slices gently with a paper towel.
- Toast the bread. Warm a skillet over medium heat. Add the butter and toast the sourdough until golden and lightly crisp. Let it rest briefly so steam can escape.
- Alternatively, one can toast the slices in the toaster.
Assembling the Sandwich
- Spread chutney on the bread.
- Add the greens, tomato, and mozzarella.
- Season with salt and pepper, then drizzle with olive oil.
- Serve.
- Close each sandwich, cut in half, and serve right away.
- For melted mozzarella: Assemble the sandwich without the greens, then warm it in a skillet or toaster oven until the cheese softens. Add the greens afterward to keep them crisp.
