My thali It has the balance of carbs and proteins from pumpkin sambar dal, Eggplant stir-fry, Rice, Rice Bhakri (gluten-free rice Flatbread), red garlic chutney, and fresh tomatoes.
The thali idea might seem elaborate to a few, but this is generally our everyday meal. Yes at times it is getting difficult with office and work, but used to be earlier. I try to make such meals at home as my family loves them and when I make such meals the whole family sits and enjoys together. Typically the roti or bread is made hot and served immediately.
I wish I could post more of such meals, but I do not find the time to click them as everyone wants food at times and you cannot expect your family to wait all time 😊.

What is in my Simple Indian Vegetarian Everyday Thali
My thali is a mix today from South Indian Sambar to Bhakri from Maharashtra. So not specific to any region but a mixture of flavors and textures. And yes that is how an everyday thali would look. You make what you have, what is seasonal, and when you are a food blogger, all different cuisines 😊.
Made using pumpkin, and homemade sambar masala powder, this Instant Pot Pumpkin Sambar is flavourful, and delicious, and is perfect as a stew for those cold autumn evenings.

Rice Bhakri | Tandalachi Bhakri | Rice Flour Bhakri
Soft and fluffy Rice Bhakri or tandalachi bhakar or bhakri is a vegan and gluten-free flatbread from India, made using flour, salt, and water.

Eggplant Stir-fry with onion and tomato
A simple dish made using onion, tomato and eggplant/aubergine with a few spices. The recipe is not yet posted but will post soon. I also make this no onion no garlic Aloo Baingan if you like to check the recipe.
Spicy Garlic and Red chilly Chutney
A chutney made with garlic, red chilly and gram flour. Goes well as a side to your meals or with some pakodas or fritters.

Steamed Rice, Tomatoes as salad and some buttermilk.
