This Strawberry chia seed pudding is a good make-ahead breakfast option for Vegetarians or Vegans.

Time taken to make strawberry chia seed pudding

The overall recipe just takes 5 minutes of preparation, it is just the setting time. Reason, we need to soak the chia seeds at least for 3-4 hours to get that pudding consistency.

Ingredients used in Strawberry Chia Seed Pudding

Chia Seeds – What are Chia seeds?

Chia seeds are small oval seeds. They are gray with black and white spots. When soaked in water or any liquid they absorb the liquid and form a gel-like structure. Due to this, they are a good replacement for eggs in baked dishes.

They help you stay full longer and are believed to help in lose weight. Chia seeds can be added to various foods like smoothies, breakfast cereals, yogurts, salads, and soups. One can buy Chia seeds at health shops or on Amazon.

Strawberries

I have used fresh strawberries in my recipe. One can use fresh or frozen as desired. Strawberries can be replaced with any fruit.

Sweetener

I do not use any sweetener generally, but I have mentioned a tablespoon of Maple syrup or Honey in the recipe. One can skip it completely, but it just adds a little kick to the pudding.

Milk

Milk is the base of the recipe. Any milk will work in this recipe. Vegans can use coconut or soy milk.

The recipe is quite simple. All you must do is add the milk, strawberry puree, and honey in a bowl. Mix in the chia seeds and let them soak in the liquid for 3-4 hours. Mix the chia seeds properly or else they might clump together. Refrigerate the mixture until you are ready to eat or remove it before 30-40 minutes if you do not like it very cold. Garnish with strawberries, nuts, or granola to your liking and enjoy.

Ingredients

  • 1/2 cup Milk (Can be replaced with any Vegan Milk)
  • 15 Strawberries
  • 1/8 Cup Chia Seeds
  • 1/2 Cup Strawberries cut into bite size Pieces, (Optional – For Garnishing)
  • 1 tbsp Sweetener Honey/Maple Syrup/ Sugar

Instructions

Making Strawberry Puree

  • Clean and rinse the strawberry.
    15 Strawberries
  • Remove the green stems.
  • Roughly chop the strawberries.
  • Process them in a blender until smooth.

Making of Strawberry Chia Pudding

  • In a bowl or a glass, Mix in the Milk and Strawberry Puree
    1/2 cup Milk, 1/2 Cup Strawberries
  • Add sweetener if using and mix.
    1 tbsp Sweetener
  • Add in the Chia Seeds and give it a nice mix. Check if there are any chia lumps formed.
    1/8 Cup Chia Seeds
  • Cover and let it rest in the refrigerator for at least 4 hours or overnight.
  • It’s done after 4-5 hours or overnight.
  • Enjoy or if you wish to enjoy as a dessert or garnish, follow the next steps.

Assembling

  • Add around 1-1.5 tablespoons of strawberries in glass.
  • Top it up with 3/4 of the Strawberry chia pudding.
  • Top it with another layer of strawberries.
  • Repeat the above 2 steps and serve it chilled.

Love chia puddings, such a versatile dish to make and enjoy. With fresh berries these are amazing for breakfast, i sometimes enjoy it as a dessert too!

Wow, simply love chia pudding. The first time I ever made one was with strawberries. Such a versatile recipe which one can enjoy for breakfast, as a snack or a dessert.
