These Chocolate Coconut Flour Cookies are a guilt-free treat loaded with chocolate and a treat for chocolate lovers. They are gluten-free, low carb, paleo and has no white sugar.

They are very easy to make and can be done in flat 20 minutes from start to finish. A fuss-free Chocolate cookie, where you can just mix everything in a bowl and just bake.

I am getting hooked on baking with coconut flour. With my earlier successful bake on Coconut Flour Orange poppy seeds muffins (Gluten Free) , I am experimenting this flour more and more. I have already made a few bread and cake with this and slowly I would be posting them.

What I love is that so little flour and you can make a big batch with little flour. It literally absorbs all the liquid it gets from the different ingredients a recipe uses. The egg is one of the main ingredients used with coconut flour as it needs binding and the egg supports it. I am yet to look at the no egg sources for this and experiment with it. Till then I am happy using eggs and a lot of eggs, as my son does not like to eat eggs and this is a good way to feed him 😁😁.

Ingredients

  • cup coconut flour
  • ¼ cup unsweetened cocoa powder
  • ½ teaspoon baking soda
  • teaspoon or a pinch of salt
  • 2 eggs
  • ¼ cup Honey or Maple syrup
  • cup coconut oil- melted and at room temperature - One can use Vegetable oil
  • ½ cup dark chocolate chips

Instructions

  • Preheat oven to 180 degrees C and line baking sheet with parchment paper.
  • In a large mixing bowl sift the flour, cocoa powder, baking soda and salt.
    ⅓ cup coconut flour, ½ teaspoon baking soda, ⅛ teaspoon or a pinch of salt, ¼ cup unsweetened cocoa powder
  • In another bowl whisk the eggs, along with Honey/maple syrup and melted coconut oil.
    ¼ cup Honey or Maple syrup, ⅓ cup coconut oil- melted and at room temperature, 2 eggs
  • Pour the wet ingredients into dry and combine until well incorporated.
  • Fold in the chocolate chips.
    ½ cup dark chocolate chips
  • Leave the mixture for 3-4 minutes, as coconut flour will absorb all the liquid.
  • Use an ice cream scoop or two spoons and place equal portions on the cookie sheet.
  • Bake in preheated oven for 12-15 minutes, until firm on the top yet soft to touch when you give a gentle push.
  • Cool them on a wire rack.
  • Once cooled store them in an air-tight container.

Notes

  • Standard US Size cups and spoons were used. 1 cup = 237 ml, 1 teaspoon = 5 ml, 1 tablespoon = 15 ml
  • The no. of cookies can be more or less depending on the size you make but it should give you around 10-14

    Is this a fudge? I love it so much that it's a lot of chocolates and healthy too. Is there any oaartivulalr brand of unsweetened cocoa? The last I got was actually sweetened and I felt guilty because of the calories

    1. Thank You. I am not sure of Oaartivulalr brand, but I suggest you can use Organic Raw Cocoa powder, if that is okay with you

    Delicious cookies that I am soooo ready to make a lot of! I would rather make it one week ahead because even so I can save them for two days max. Yum!

  15. Prep was simple. I had to convert Celsius to Fahrenheit... No biggy. (350 btw). Cookies are like brownie bites. Great flavor and consitency. Makes about 2 dozen bite sized yummies. I will likely double next time. Enjoy!

  16. When I tried to mix everything, and waited for 4mins for it to absorb, the dough still looks too liquid in form 🙁 waited for another 4mins still the same ☹

    1. Generally coconut flour absorbs a lot. I would say go ahead with the bake and next time try changing the brand of the flour.

    Used honey. When measuring the coconut oil i used it room melted and didn't heat up. Did everything else as directed. Cookies turned out great. Not overly sweet and ideal for a healthier dessert when need something to cover up your sweet tooth without feeling guilty

    1. Glad you liked it. Did you leave the mixture for 4-5 mins to absorb the liquid, as coconut flour absorbs liquid. If yes, maybe next time you can reduce the oil and egg a bit, as sometimes different brand flour have different absorption capacities.

    These cookies are excellent! So quick to make and absolutely guilt free. I used my silicone hello kitty molds for these cookies and they came out perfectly. As stated, it is more similar to a brownie than a cookie...yummy nonetheless. So thankful for this recipe, cheers to more batches <3

    My grandchildren loved them. They do seem soft even after cooling at the temperature of 160. Is this right? Or should I raise the temp?

    1. Please use the temperature of 180 C as mentioned. This cookies are a bit on the softer side , they will not be hard. I am so glad that your grandchildren loved them

    Lovely! i made these adjustments for my own dietary needs and preferences:
    - instead of 2 eggs: 4 quail eggs, 1 TBSP chia seeds, and 3 TBSP water
    -instead of 1/4 cup maple syrup: 1/8 cup maple syrup and 1/8 cup water
    -instead of cocoa powder: cacao powder same amount
    -instead of baking soda: 1.5 tsp aluminum free baking powder
    -added 1/4 cup gluten free organic quick oats
    cooked at 355 F for 18 minutes and they are lovely! the chocolate chunks make each bite extra satisfying. love that each cookie is appx 3.75 carbs

    I’ve been trying out coconut flour recipes and this has been my favorite! I kinda wish it had a more gooey texture, is that because it’s gluten free?

    1. Thank you for your feedback, much appreciated. Yes due to the flour. I am working on a gooey texture. If you want you can check this Ragi Brownies, again not very gooey, but it taste good.

    1. Banana in replacement of Sugar? You can try with equal quantity of mashed bananas for sweetener. I have not tried this, so it would be an experiment for you. Letting you know before hand.

  25. Lotgle too oily for me. Made them again and substituted oil for applesauce 1/3c. Turned out super moist and yummy!
    Also decreased maple syrup to 2 tbsp

    What a wonderful recipe!! Because I cut down the sugar, I used some date syrup and stevia instead of the maple syrup. It was a guess, but with all the chocolate I needed a bit more. Also, I added another egg... 3 small eggs rather than 2 large and it was just the extra moisture needed. The second time I made them I added in a handful of shredded coconut to accent the virgin coconut oil flavor. Chocolate and coconut = YUM! Thanks so much for a great recipe.

  27. Hi Renu. I was wondering if these can be made with flax eggs rather than eggs. Trying to eat vegan foods as much as possible.

    1. Hi Meena, I think it should work. You would need to give it a try. The eggs helps in binding the flour and I think even flax eggs would do the trick. Thanks, Renu

    1. Unfortunately I do not give that as of now, but you can put that in an free nutrition calculator and get that information.

  28. Under your notes, you state 1 teaspoon is 15ml. This is incorrect. 1 teaspoon is 5ml, 1 tablespoon (3 tsps) is 15ml.

    1. If your coconut flour is lumpy it is a good idea to sift it else it is not required. When you sift if there is too much of discard, it is best to measure after

  29. Can I replace the honey with white sugar? I cant find a good recipe for gluten free desserts that doesn't use honey or maple syrup. I have celiac disease so I cant eat gluten, but I don't like alternative sweeteners.

    1. Hi, Yes I think it will work. Honey or maple syrup will give it a little extra liquid. If you find the batter too thick, I would suggest adding 1 more egg, or add 1/4 cup milk or water. I am telling you this adjustments with my gut feeling that it will work. But let me tell you that I have not tried. I will try to do this soon if possible, until then if you try, please reply me here so that it helps others too. Also do not forget to rate the recipe. Thank You, Renu
