Air Fryer Eggplant Pizza (Aubergine or Brinjal Pizza)

Eggplant, also known as aubergine, may not be a favorite for everyone, but it's one of the best low-carb vegetables. It can be used in a variety of recipes, such as Indian-style No Onion No Garlic Aloo Baingan, No Onion No Garlic Baingan Bharta, creamy Baba Ghanoush dip.
Today's recipe for Air Fryer Eggplant Pizza
For today's Eggplant Pizza recipe, I start by baking the eggplant slices in the oven or air fryer. The first step is to slice the aubergines, rub a bit of oil on them, and then bake until tender.
Next, I spread my homemade pizza sauce on the baked eggplant slices. You can then add your choice of toppings like veggies, jalapeños, tofu, or paneer. Using tofu or paneer makes the recipe protein-rich. Finally, add some cheese and bake again until the cheese is melted or browned.
Can this Aubergine Pizza be baked in an oven?
Yes, you can definitely make this in an oven. If you're preparing a large batch, I would recommend using the oven for convenience.

Is this Vegan
I used cheddar cheese for this recipe, so it's not vegan. However, vegans can easily make it vegan by using a plant-based cheese alternative.
It this gluten-free
Yes, that's correct. If you're using any spice mixture, make sure to check the ingredients to ensure it's safe for those with gluten intolerance.

Air Fryer Eggplant Pizza
Equipment
Ingredients
- 1 Large Eggplant
- 2-3 tablespoon Olive Oil
- ¼ Cup Cheese Mozzarella, Freshly grated/torned/chopped
- ¼ Cup Cheese Cheddar
- Salt as required
For the Sauce
- 3 teaspoon Olive Oil
- 1 can diced tomatoes (2 fresh tomatoes diced)
- ½ teaspoon Black Pepper
- ½ teaspoon Italian Seasoning Mixed Herbs
- 3 pcs Garlic small, minced/grated
- ½ Inch ginger
- Salt as required
Optional Topping Ingredients
- 4-5 Jalepano (Optional)
- ¼ cup Tofu / Paneer
Instructions
For Sauce Prepartion
- Heat oil in a pan. Saute garlic and ginger in it.3 teaspoon Olive Oil, 3 pcs Garlic, ½ Inch ginger
- Add the diced tomatoes, seasoning, mixed herbs, black pepper, and salt. Go easy on the salt as you will be adding cheese later on.1 can diced tomatoes, ½ teaspoon Black Pepper, Salt, ½ teaspoon Italian Seasoning
- Let it simmer and cook until the tomatoes are soften and the sauce thicken's so that it is just perfect to spread on the eggplant slices. Switch off and let cool.
Preparing Eggplant Pizza
- Cut the eggplant in circles and around ¼-1/2 inch in thickness.1 Large Eggplant
- Place them on paper towels or plate.

- Spread some oil on it and Sprinkle them with salt, so that they release some water.2-3 tablespoon Olive Oil, Salt
- Let them sit for some time. In the meantime preheat your oven to 180 Deg C.
- Brush or grease the eggplants with olive oil and add a generous amount of seasoning on them.
Baking in an Air Fryer
- Preheat the Air Fryer to 180 Deg C
- Roast the eggplants in them for 10 minutes, turning them at half time.
- Add the toppings of choice. Add cheese.¼ Cup Cheese, ¼ Cup Cheese, ¼ cup Tofu / Paneer, 4-5 Jalepano
- Let it air-fry for 4-5 minutes or just until the cheese is melted.
- Enjoy it warm.
Baking in an oven
- Preheat the oven to 180 Deg C
- Line a baking tray with parchment paper and roast the eggplants in them for 20-25 minutes, turning them at half time.
- Once the eggplants are done baking, take them out of the oven, and spread the sauce on top.
- Once the eggplants are done baking, take out of the oven, spread the sauce on top.
- Add the toppings of choice. Add cheese.
- Let it broil for 5-6 minutes or just until the cheese is melted.

- Enjoy it warm.
Notes
- Standard US-size cups and spoons are used. 1 teaspoon = 5 ml, 1 tablespoon =15 ml, 1 cup =237 ml.
- Air Fryer settings are different so baking time varies.

These are really cute and sound delicious. I love the use of egg plant for the "crust."
I adore eggplant and keep trying to make my family like it too, but after a very soggy fried eggplant sandwich years ago, I don't think my kids will ever forgive me LOL. Eggplant parmiagiana is one of my all-time favorite foods and this just looks like a little almost-version of it. It looks fantastic. Also love that there are green olives on it. I grew up eating green instead of black olives on my pizza!
